Personal preference. Everyone likes different things, alot of which baffle or annoy others.
If I'm going to eat chocolate syrup, I'd rather have it on chocolate ice cream. But I also like vanilla with chocolate syrup on occasion.
When the vanilla melts and it gets swirled with the chocolate syrup, you end up with the same thing you would have if you just ate regular chocolate ice cream, because that is how chocolate ice cream is made. When you go places like Dairy Queen or wherever, they make their chocolate shakes, etc by starting out with vanilla ice cream and adding chocolate syrup, then mixing it until it becomes chocolate ice cream. Try it sometime and see for yourself what happens.

I do it because I enjoy the vanilla bean flecks of Bryers vanilla and then I add Hershey's chocolate syrup, and quite a bit of it. Then I eat the vanilla ice cream melted and mixed with the chocolate syrup like a super rich milk shake (with out any added milk). Damn, now I have a craving.

Chocolate syrup has a more intense flavor that chocolate ice cream.
Besides, it give you the choice of a bite of ice cream, any flavor, with or without chocolate

it makes a difference if you have chocolate syrup for your ice cream. some people enjoy the rich liquid of the syrup over just having plain old chocolate flavored ice cream.
