Ingredients:
1.5 lbs ripe juicy tomatoes
slices crusty Italian bread, cut 1/2 in. thick
garlic clove minced
1-2 T capers, rinsed
1/4 c loosely packed fresh oregano or fresh basil
S&P
1/3 c extra virgin olive oil
Directions:
Bring medium sauce pan of water to a boil. Cut a cross at the root end of the tomatoes and drop them into boiling water. Cook until skin of tomates begins to split, 1-2 min. Transfer tomatoes to bowl of iced water. Peel and seed tomatoes, then roughly chop. Place in strainer over bowl for 20-30 min. Brush bread lightly with olive oil and place over hot grill or under broiler until golden on each side. Put tomatoes, garlic, capers, and oregano or basil in bowl. Season with s & p. Add oil and mix. Spoon tomato mixture over each bread slice.

Bruschetta with Garlic Cream, or Bruschetta con Crema di Aglio: This is one of those either-or dishes; either you are enjoying it with your Significant Other and have nothing business-related panned for the next couple of days, or you and your colleagues are enjoying this together, or you should make it at another time. But in the proper setting it is quite nice. To make sufficient garlic cream to serve 4 you'll need:
INGREDIENTS:
2 large heads garlic
2 tablespoons olive oil
A sprig of fresh thyme
Thinly sliced toasted bread
Grilled marinated eggplant or peppers, and sliced tomatoes (optional)
PREPARATION:
Preheat your oven to 400 F (200 C)
Wrap the heads of garlic in aluminum foil and roast them for 40 minutes. As soon as they have cooled enough to be handled, squeeze the pulp from the garlic cloves, and blend it with the olive oil.

Here is one for WHITE BEAN BRUSCHETTA
(2) loaves french bread, sliced on an angle into 1/2 inch slices
3 Tbs. olive oil
(2) cans white beans (rinsed & well drained)
1/4 cp. olive oil
3 Tbs. balsamic vinegar
(4) cloves garlic (finely chopped)
salt & fresh pepper
1/4 cp. italian flat leaf parsley (coarsely chopped)
2 Tbs. fresh oregano (finely chopped)
1. preheat oven to 350
2. brush each slice of bread with olive oil
3. Place the slices on a baking sheet & bake in the oven 10 - 15
minutes or until lightly golden
4. Combine beans, oil, vinegar & garlic in a large bowl, season
with salt & pepper & add parsley & oregano
5. Top each slice of bread with a heaping tablespoon of the white
bean mixture & serve immediately
** This recipe can be easily doubled or tripled for larger parties.

It is so easy you don't need to buy that store bought garbage, ok maybe the bread...
Go to your local bakery and ask for Pane Di Casa (Bakers Delight have a nice one or a continental deli), Slice it in 15-20mm slices and slightly toast. Rub one side with a clove of garlic & set aside. Coursely chop a spanish onion, 5-6 roma tomatoes and a handful of continental parsley. Mix with a drizzle of extra virgin olive oil, balsamic vinegar, salt and cracked pepper to taste. Spoon mixture onto warm bread before serving. Viola

1 clove garlic, crushed
seasoning salt to taste
ground black pepper to taste
Directions:

Toast some Italian bread, rub it over with a cut garlic clove, chop 2 tomatoes, put in a bowl and toss with salt and pepper to taste and about 1tsp balsamic vinegar then place chopped tomato on top of toast, drizzle with olive oil.

slice tomatoes around the equator and squeeze out the juice and seeds. chop into little bits. add some minced shallot, salt and pepper to taste. slice a good sour baguette into thin slices and drizzle with olive oil. broil in oven until golden. let the bread cool a bit and rub with a peeled garlic clove. mound the tomato mix on top, sprinkle with fresh basil thinly sliced and grate fresh asiago cheese on top. yummy!
