Try a pork roast Flourintine. You will need:
1 pork loin, 3 pounds, butterflied twice.
Filling:
1 Package frozen leaf spinach
2 1/2 C. Half&half
1/4 C. Grated parmisan cheese
2T. minced garlic
1/8C Anisite liquor such as Sambuca
6 each sundried tomatos, julienne cut thin on a bias.
Method:
In a large enough saucepot to hold the entire recipe, satue frozen spinach over medium high heat in olive oil until thawed. Deglaze with anisite and lower heat to medium. Reduce stirring frequently. Add remaining ingredients and turn heat back to medium high, stirring often. Once the creamed spinach has reached desired consistancy, remove from heat.
Using a rubber spatula, spread the creamed spinach evenly onto the butterflied pork roast. Roll the roast up like a jelly roll and secure the ends either by tying them up or skewering them. Roast @350 degrees for about 90 minutes or until the internal temp has reached at least 160 degrees. Remove the roast from heat and let it sit for 10-15 minutes. Remove the strings or skewers and slice into 1/4 inch pieces on a bias. Serve with side dishes of your choice.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

a good recipe is a tortilla shell some peanutbutter and lemon juice mix it all together and spread it on the tortilla and worm it in the microwave
