Shoulder is shoulder and ribs can be country style, spare ribs (I think this is what you want) or baby back ribs.
In any case here is a method that would work for all.
Smoked Spare Rib Recipe
2 slabs pork spareribs
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon pepper
Apple Wood Chips/Chunks
barbecue sauce (recipe follows)
Rub cinnamon, cloves and pepper into
both sides of ribs. Place ribs on rack in smoker
Smoke spare ribs with apple wood for 6 hours or until tender (about 170 degrees).
Barbecue Sauce:
2−15 oz. cans tomato sauce
1/2 cup molasses
10 cloves garlic
2 tablespoons ground cumin
2 tablespoons dry mustard
fresh ground pepper
1/2 teaspoon cinnamon
1/4 teaspoon hot pepper flakes
1/2 cup red wine vinegar
Combine all ingredients except vinegar in saucepan. Simmer,
covered, on low heat for 1 hour, stirring occasionally. Add
vinegar to taste and simmer for another 15 minutes. Chill at
least 24 hours, or until ready to use.
This recipe feeds 4-6 people

Smoky Country Style Ribs
Ingredients
2-1/4 lbs. country style pork ribs
1 tsp. garlic salt
1 tsp. freshly ground black pepper
1 cup ketchup
1/2 cup brown sugar, firmly packed
1/2 cup chilli sauce
2 Tbsps. cider vinegar
2 Tbsps. liquid smoke
1 Tbsp. lemon juice
Instructions
Preheat oven to temperature 325°F. Sprinkle ribs with garlic salt and
pepper. Combine remaining ingredients in a saucepan over medium heat.
Cook about 10 minutes, stirring occasionally. Keep warm.
Place ribs, rib bones down, on a rack in a shallow roasting pan.
Baste with sauce. Bake 1-1/2 to 2-1/2 hours,
turning and basting with sauce every 30 minutes. Cut into
serving-size portions. Bring remaining sauce to a boil and serve with
ribs.

I usually serve this with a cucumber in sour cream salad and rye bread.
Baked Ribs and Kraut
One package of sauerkraut (about four cups)
2 or 3 apples, cut into slices
1 cup celery, chopped
l large onion, chopped
2 to 3 carrots, peeled and cut into 2-inch pieces
4 medium potatoes, cut into pieces
2 tbsp. brown sugar
2 ½ to 3 pounds of spare ribs
salt and pepper to taste
½ cup raisins
Place ribs, meaty side up in large baking pan or Dutch oven. Sprinkle with salt and pepper to taste (I sometimes use the garlic salt and pepper combination).
In large bowl, combine the sauerkraut and brown sugar. (If I’m in a hurry I just spread the kraut across the ribs and sprinkle the brown sugar across the top). Top with apples, celery, onion, carrots, and potatoes.
Cover and bake at 350 degrees for 2 ½ to 3 hours or until ribs are tender. (About half way through, I put the ribs on top of the kraut and veggie stuff so they get brown.) Sprinkle with raisins.

i have best of luck cooking pork shoulder in the crock pot. with a can of rootbeer, and onion soupmix "no joke" when done shred it and add your bbq sauce, as for the ribs use a smoker with a water pan with apple juice. and fruit wood chips takes me about 3hrs low heat. use low heat for all tuff meet.
