My dash reading gives me a digital readout of the cars temperature. I think it had a history of overheating. Does anyone know what the average temp should be?

depends on ambient conditions but 215 to 225 is just fine, it shouldn't stay below 200 for more then the first ten minutes of driving, and shouldn't go above 220 unless you're at a stop light behind a bus in the desert

if it regularly goes above 200 f keep a VERY close eye on it , it will withstand short bursts to 215 / 220 but that is scary hot . when the car is parked and cold take a garden hose with a spray nossle on it and wash the outside of the radiator from the motor side facing the grill , this will get rid of any accumulation of bugs in the rad. good luck with the old sled, e-mail with any further questions i will try to help.

I do not know what the temp SHOULD be, but make sure that you have a working thermostat, clear radiator and heater core,
and you can get the coolant system pressure tested to make sure that it is ready to go.
BTW, I have never heard that the Eldorado had a overheating issue.

you might need to replace your thermostat and water pump maybe get the radiator cleaned or you might have some bad heads other than that you have a sweet car

this could have the aluminum engine block and they know if they overheat your motor will most likely be destroyed aluminum cant take the heat like cast iron can.
