You must be going for that "rubber turkey" I've heard so much about.

Slow-cooking poultry is a sure way to get there, too!

If you want a lovely, moist, completely cooked turkey breast...

Boil it.

Seriously! It will be ready in about 45 minutes, when cool, the skin (and useless fat) will peel right off, it slices perfectly and freezes perfectly. Don't worry too much about the water you boil it in either, a bit of salt is about all that you'll want, as turkey doesn't allow a lot of infusion while it cooks.

If your goal is soup, you'll have a nice start on your stock. Add veg to the water after the cooking, adjust the spices, put in noodles, dumplings, whatever and reintroduce the meat just before serving!

Otherwise, make a nice sauce or gravy, or chunk it up and make your turkey stew or soup, slice for sandwiches, etc.

I season my turkey breast with seasoned salt inside and out, then
I put a onion cut up along with a cut rib of celery and a medium carrot in the cavity,. without adding any liquid i cook the turkey-
breast for about 10 hours on low.

On high 3-4 hours on low 6-8 hours

I am guessing a minuimum of about 5 hours.
I would monitor the temp with a meat tehrmometer to make sure it has been safely cooked (160 degrees).

Depends on high or low, I would suggest 8-10 hrs on low. In a slow cooker you really can not over cook it!
