Spinach -- fresh, briefly sautéed, works best -- with feta cheese, and plum tomatoes. Very good.
Fry in a _wok_? And...lemon juice? Dude, you make weird omelettes.

But, if you like them from a wok, with lemon -- ignore that.
Potato isn't nearly as popular as it should be as an omelette filling. Add cheddar and green onions or chives.
Nothing but chopped fresh herbs, salt, and pepper in a nice thin one is good, too.

Thin strips of deli honey ham, sharp cheddar cheese, topped with a dollop of sour cream. Served with old fashioned onion-hash browns on the side.
Left-over rib eye steak, (sliced on the bias to preserve tenderness), sauteed mushrooms and onions or shallots, some cheese, topped with a dollop of Bearnaise or sour cream. Served with a crusty warm french stick and a bit of salad with vinaigrette.
Old-fashioned, but still a favourite; the Western Omelet!
Diced green pepper, onion (or shallot), small cubed potatoes, ham, cheese... mm-mm!
Don't forget the dessert Omelet either; filled with jam of your choice and lightly dusted with powdered sugar.

fresh spinach is really good in omelette's. Just saute in a pan until it turns bright green and add some eggs.
Also, you can cube up leftover potato, heat them up and add them in your omelet with some cheese. That's what I had today for breakfast.
Another unusual idea is to add peas to the mushroom/onion mix that you already use, that's really tasty.

Left over boiled potatoes, from the day before, fried then put in omelet with onion spices or any of the above. When boilling potatoes I often do more then needed, for next days omelet.

Bell pepper cooked with the other veggies is good too,and dont forget the cheese,I usually use cheddar but different kinds are a nice change of pace. Ive used all kinds of cooked meats,ham,bacon,saugage or canadian bacon . And dont forget the sides hashbrowns and toast.

The little diner I go to for breakfast all the time has a really good veggie feta omelet...it's got onions, green peppers, tomatoes (whatever kind of vegetables you want, really) and they're very generous with the feta!! it's awesome! i love it!!

try this, u might think its funny but i always have it in vietnam...chop green bean really fine,,fry them first with galric and add the eggs. or u could do the same with fine chop cabbage and tomato, really nice to go with some boil rice too.

crabmeat and copious amounts of cheese!
chopped ham and cheese and mushrooms...v good.
chicken, onions and bell peppers and cheese with fajita seasoning
corned beef hash and cheese in omelettes....delicious!
