I just love the salad, but unfortunately live far away from my hometown Furrs Cafeteria. Thanks!

Heres two that are really good.

INGREDIENTS
1 pound carrots
2 tablespoons white-wine vinegar
Coarse salt and black pepper
1/2 teaspoon ground cumin
1/8 teaspoon red pepper flakes
1/3 cup raisins
1 tablespoon olive oil
DIRECTIONS
Peel and coarsely grate 1 pound carrots (to yield 4 to 5 cups).
In a large skillet over high heat, bring 1 cup water, 2 tablespoons white-wine vinegar, 1 teaspoon coarse salt, 1/2 teaspoon ground cumin, 1/4 teaspoon ground pepper, and 1/8 teaspoon red-pepper flakes to a boil.
Add carrots and 1/3 cup raisins; toss to coat. Reduce heat to medium; cover, and cook until carrots are crisp tender, tossing occasionally, 8 to 10 minutes.
Mix in 1 tablespoon olive oil. Transfer to a covered container; chill until ready to serve.


INGREDIENTS
1/2 cup sour cream
1/2 cup light mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt
1 tablespoon brown sugar
4 cups shredded carrot
1 cup raisins
DIRECTIONS
In a large bowl, whisk together the sour cream, mayonnaise, lemon juice, salt and brown sugar. Add carrots and raisins and stir until coated.

I don't know about furrs but my moms went like this

2-3 carrotts grated
1 3 oz can pineapple
1/3 cup rasins
1/2 cup coconut
1/2 cup mayonnaise ( or enough to coat)
1 tsp lemon juice

mix all ingredients and refrigerate overnight

2 cups raw carrots, shredded
1/4 cup mayonnaise
2 tablespoons fresh lemon juice
1/2 cup seedless raisins
1/4 cup low-fat yogurt (plain)

Scrub, scrape and shred carrots.
Combine with raisins.
Mix together remaining ingredients and pour over.
Mix thoroughly.

I just eyeball it- Add mayo until it is the consistency you like. Then, 1-2 Tbsp sweet relish, 3/4 tsp onion powder, salt and pepper to taste, and that's all I add to mine. You can add mustard if you like, I'd use only about 1 tsp though. Hope your egg salad turns out yummy! It's one of my FAVES!
