Lobster meat has a very delicate flavor - unfortunately you do have to plunge the live lobster in rapidly boiling water. The reason is toxins in the lobster go bad fast if the lobster dies.

This is the way we do it in Maine and Massachusetts

There is really only one way to boil lobsters but steaming is much better:

Huge high sided pot

A gallon or so of pure water

Lots of salt (2 tablespoons per quart)

You do not want anything else in the water to flavor the lobster meat because it is so delicate

Bring to a rapid high temperature boil and plunge the lobsters into the water then clap on the top of the pot so they cannot crawl out

the cooking time depends on the weight of the lobster usually most lobsters you get in the grocery are about 1.5 pounds and that takes about 20 mins.

Pull the lobsters out and let them drain and cool.

DO NOT RINSE THEM OFF - just let them cool

Melt a very good quality butter and give each person their own little dipping bowl (you can buy sets where the bowls have candle warmers to keep the butter melted)

Traditionally people are given bibs like babies and a nut cracker and nut pick to get out the meat. Most times the lobsters are served on newspapers spread on a table or on a plastic table cloth - the eating of lobsters can get messy.

Delicious

After you can crack the shells up and boil them for a stock with which to make soup or sauces - don't waste the precious lobster bits

I agree with the steaming of lobsters but you have to have a false bottom or a rack to put the lobster on so the steam gets to the bug but the water does not.

Sadly, there is no safe way to handle dead lobsters.

Literally the second they expire, certain enzymes bust loose and begin doing evil things (things that can make you quite ill) inside the critter.

If you're tenderhearted, put your live lobster in the freezer for about 25 minutes before cooking and plunge it (carefully) headfirst into boiling water.

If your concern is for the demise of a living creature, consider this. The brain of a lobster is about as complex as a grasshopper. If you can step on a bug, you can despatch a lobster... and lobsters are much better eatin'!

You might also ask your fishmonger to cook it for you. Many fish counters will do this for free or, at most a very small fee.

Best wishes!

you have to start with a fresh live lobster. but they have very small brains, so when they are put into boiling water, they don't suffer. Only use a few inches of water, though, because otherwise the water will not keep boiling. Don't flavor the water, and only cook for 18-20 mins, or until they turn red. Serve with melted butter. Don't forget to clean the meat from between the gills. that is the tastiest !!!

Sorry, you boil them alive.

INGREDIENTS
3 gallons water
2 large onions, quartered
10 cloves garlic, peeled and cut in half
2 lemons, quartered
2 oranges, quartered
5 stalks celery, quartered
4 tablespoons black pepper
4 tablespoons seasoned salt
6 fresh jalapeno peppers
2 fresh live lobsters
DIRECTIONS
Pour the water into a large pot and add the onions, garlic, lemons, oranges, celery, black pepper, seasoned salt and jalapeno peppers. Bring to a full rolling boil and boil for 20 minutes.
Add the lobsters and place a lid over the pot. Boil for 15 minutes. Remove the lobsters from the pot, and place in a colander under cool running water to stop the cooking. Serve.

Most modern megamarkets will gladly steam the bugs for you. Make sure you bring a carrier that has warm moist towels already in them to keep the bugs warm for the trip home.

IF you wish to do the deed yourself. You can place them into your
refrigerator for a half and hour to and hour before steaming. They go to sleep and they never feel a thing when you pop then into the steamer.

OH and steaming, IS the way to go, not boiling.

Depending on where you buy the lobsters, you might get lucky. Two of my local supermarkets with cook raw seafood for you (that includes lobster, clams, shrimp, crab, and scallops). so it probably wouldn't hurt to ask the manager of the meat/seafood section. However if they don't, then you need to do it yourself. Good luck, and i hope things are easy for you.

We throw them in alive. If they are kept cold enough they go into a catatonic state where they cannot feel anything (or at least that's what Alton Brown told me!). If you don't like that you can kill them. Carefully place a knife between the eyes and stab it.
