when my son was 3 i got some white construction paper and let him finger paint pictures on it, after it dried i took it to a photo shop and had them laminate it and sent it to my mom for Christmas present. she loved it so much she told me to have him make 3 more she uses them for place mats on her dinner table, she said its a great conversations piece when her friends come over and she can brag about her grandson. he's 7 now maybe i should do it again this year, (time for a up grade lol)

maybe you could create a paper frame for a picture of them and let them decorate it in christmas colored sprinkles/crayons/pasta noodles, and the like, then put their most recent/cutest picture in it.
