Carrot Souffle Recipe

Ingredients:
3 1/2 pounds peeled carrots
2 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon vanilla
1/4 cup flour
6 eggs
1/2 cup margarine or butter
Powdered Sugar
Directions:
Steam or boil carrots until extra soft. Drain well.
While carrots are warm, add sugar, baking powder and vanilla. Whip with mixer until smooth. Add flour and mix well.
Whip eggs and add to flour mixture and blend well. Add softened butter to mixture and blend well Pour mixture into 13x9 inch baking dish; it should be about half full, as the souffle will rise.
Bake in 350 degree oven about 1 hour or until top is light golden brown. Remove from oven. Sprinkle lightly with powdered sugar over top before serving.

Carrot Souffle
Ingredients
1/2 c crushed corn flakes
3 tb brown sugar
2 ts butter; room temperature for the souffle:
1 lb carrots, cooked; until tender
3 eggs
1/3 c sugar
3 tb all-purpose flour
1 ts vanilla
1/2 c (1 stick) butter; melted
1 dash of nutmeg
1 pinch of salt; (optional)
Instructions
Preheat oven to 350 degrees.
For the topping: Combine the crushed corn flakes, brown sugar and butter. Set aside.
Puree the cooked carrots and the eggs in a blender (do not use a food processor). Add the sugar, flour, vanilla, butter, nutmeg and salt and blend. Pour into a 1 1/2-quart pan or souffle dish and bake for 40 minutes. Spread the topping over the souffle and bake 5 to 10 minutes longer, until the topping is lightly browned.

here i found a good one..
Carrot Souffle
1 1/2 lbs carrots, sliced
1/2 cup butter
3 eggs
1 teaspoon vanilla
1/4 cup all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 cups sugar
3/4 teaspoon ground cinnamon (or to taste)
Add carrots to a saucepan; add water to cover; bring to a boil; cook 20-25 minutes or until tender; drain.
Add carrots, butter, and the rest of the ingredients to a food processor.
Process until mixture is smooth.
Spoon mixture into a lightly greased 1 1/2 quart souffle dish.
Bake at 350 degrees for 1 hour and 10 minutes or until set.
