A Good Mutton Soup
3.4lt (6 pints) Water
2.27-2.7kg (5-6lb) Neck of Mutton
3 Carrots
3 Turnips
2 Onions
1 Large Bunch Sweet Herbs, including Parsley.
Sherry (optional)
Arrowroot
Salt and Pepper, to taste.

Place the ingredients in a covered pan over a very low heat and let them remain there the whole day, stirring occasionally.
The next day put into a saucepan and place it on a brisk heat.
When it starts to boil, reduce the heat and simmer until the meat is done.
When ready for use, remove the meat, dish it up with carrots and turnips and serve.
Strain the soup, let it cool, skim off all the fat, season and thicken it with a tablespoonful or rather more, of arrowroot, flavour with a little sherry, simmer for 5 minutes and serve.

Time: 15 hours.
Sufficient for 8 persons.
Seasonable at any time.

Hammelsuppe Mutton Soup

Ingredients

600 g Mutton (1 1/4-1 1/2 lb)
1 ts Salt
1 Onion
1/2 Celariac (celery root)
1 Leek
1 Carrot
3 md Carrots
4 ts Fine farina (cornmeal, powder)
1 Egg yolk
2 ts Cream or milk

Instructions

Serves four.
Potato dumplings (Kartoffelkloesse), parsley, nutmeg
Cut well washed pieces of mutton into bite sized pieces. Place in water (1 1/2 liters) with salt and bring to a boil. Add the the celeriac and carrots, finely cut onion, and then put in cubed potato. Cook for 1 1/2 hours. If the potatoes do not fall apart, run them through a sieve. One half hour before the soup is finished, sprinkle in the farina. When fully cooked, put walnut-sized pieces of potato dumpling into the soup. After ten minutes stir in chopped parsley, nutmeg, and add in the egg yolk that was beaten into the cream or milk.

Mutton Soup

8 lamb chops
1 teaspoon salt
1 teaspoon pepper
1 tablespoon vegetable oil
2 cups water
1 tablespoon chopped flat-leaf parsley
1 bay leaf
1 teaspoon peppercorns
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 pound potatoes, peeled and diced
2 cups cabbage, shredded
1 onion, chopped
1 leek rib, sliced
12 pearl onions
1 1/2 cups celery, sliced
1 1/2 cups peas
Season lamb chops with salt and pepper. Heat oil in a saucepan and brown on both sides of lamb chops. Remove lamb and place in a Dutch oven. Pour off any fat and deglaze saucepan by adding water.
Pour water over lamb in the Dutch overn and bring to a boil. Enclosed in cheesecloth bag, add chopped parsley, bay leaf, peppercorns, thyme, and rosemary to the boiling water. Lower the heat and simmer covered.
Add diced potatoes, shredded cabbage, chopped onion, sliced leek rib, pearl onions, sliced celery. Simmer for 20 minutes or until meat and vegetables are tender, then add peas. Add more water if needed. Simmer for 10 minutes

Mutton is "lamb" so anything that goes with it. Sweet potato,carrots,parsnips,celery,peas - but NO corn,beans.
Make the base of the stew just as you would for beef - and go from there.Good Luck, and Keep cooking! The more you learn to cook, the less you will spend on groceries! You Will save money.

In the superstore, fruits are usually chosen far too soon. Some are rocks, many are bitter. Some of the fresh vegetables are typical right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
