CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 chicken breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.

Pasta with Tofu and Walnuts
INGREDIENTS
8 ounces penne or other pasta of your choice
1/2 (14 ounce) package firm tofu
3 tablespoons olive oil
2 cloves garlic, minced
1 cup sliced red onion
3/4 cup quartered fresh mushrooms
2/3 cup whole walnuts
3 tablespoons red wine vinegar
1 tablespoon black pepper
grated Romano cheese to taste
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until tender; drain.
In the meantime, cut the tofu into 1/4 inch thick by 2 inch wide slices. Heat the olive oil in a saute pan over medium-high heat. Cook the garlic and onions and cook until they begin to soften, about 1 minute. Stir in the mushrooms, walnuts, vinegar, and black pepper, turn heat to medium-low and allow to simmer for 2 to 3 minutes. Gently fold in the tofu slices, cover, and allow to simmer for about 5 minutes more.
When the pasta has cooked, toss it with the tofu mixture, and sprinkle with Romano cheese.

Emeril.com, He will send you recipes through your email , here is a quick and easy recipe, Hotdogs wrapped in bacon, layer them in baked beans in a cassorole dish, when you open up the can of beans before you put in dish, aadd 2 tablespoons of masterpeice B.Q. sauce, diced onions, and 1 teaspoon of mustard mix in the beans, put beans in dish and layer hotdogs with bacon around thye dogs and bake for 30 minutes till done
