Chicken Soup Recipe
Ingredients:
* 1/2 cup unsalted butter
* 1 medium Spanish onion, chopped
* 2 stalks celery (with leaves), chopped
* 3 medium carrots, chopped
* 1/2 cup plus 1 tablespoon flour
* 7 cups chicken stock )
* 3 sprigs parsley
* 3 sprigs fresh thyme
* 1 bay leaf
* 2 3/4 cups cooked, diced chicken
* 1/2 cup heavy cream
* 2 1/2 teaspoons dry sherry
* 1 tablespoon salt
* Freshly ground black pepper to taste
* 2 tablespoons chopped flat-leaf parsley
Procedure:
Melt the butter in a large soup pot over medium heat. Add the onion, celery, and carrots and cook, covered, stirring occasionally, until soft, about 12 minutes. Add the flour and cook, stirring with a wooden spoon, for 2 minutes more.
Pour in the broth and bring to a boil while whisking constantly. Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the soup. Lower the heat and simmer for 15 minutes.
Stir in the chicken and bring to a boil. Remove from the heat.
Whisk the heavy cream, sherry, and salt into the soup and season with pepper to taste. Remove and discard the herb bundle. Divide among soup bowls, sprinkle the top of each soup with the chopped parsley and serve immediately.

My family enjoys this chicken noodle soup
1 whole chicken
1 large onion or 2 small
3 carrots
2 stalks celery
1/2 bunch of parsely (flat or curly)
4 TBS chicken bullion granules
Rough;ly chop up the veggies and put everything in a stock pot full of water and simmer 1.5 - 2 hours. Take out the chicken and cool. When the chicken is cool enough to handle (if I am in a hurry I will put it in the fridge or freezer for a little bit) pull apart into bite size pieces. Strain out the veggies. (My family does not like chunks of veggies in the soup, but if you want you can dice some of the cooked veggies up and put them back into the stock) Add chicken back in and add 1 or 2 boxes of chicken broth if more liquid is needed or wanted. Bring to a boil and add egg noodles. Cook to package directions.

Chef Caprial Pence has an absolutely amazing recipe for chicken soup one of her books...I forget which one. That recipe also ended up on a carton of chicken broth, might be Pacific brand.
All her recipes in all her books that I've ever tried are winners, and I've tried a lot. Worth checking out.

All you have to do is bring chicken(prefferably with bones) to a simmer. add onion celery and carrott plus any herbs you like
simmer one hour
strain broth and refrigerate til cold. in the meantime, pull chicken off bones and cut up any veggies you want
when the broth is cold, skim the fat. Then bring it back to a boil, add chicken and veggies
season to taste simmer til done

They will are good for health, however if you are asking which is better for diet in this instance all vegetables would do well
