Potato soup base
4 cups milk
1 cup sour cream
1 teaspoon dill
salt and pepper to taste
take 2 tablepoons butter and 2 tablespoons of flour and blend to make roux over med. heat in large saucepan, when well mixed add the milk a bit at a time, stirring to keep mixture smooth. When blended add the sour cream and blend. Add dill, salt and pepper--soup base!

INGREDIENTS
1 tablespoon butter
1 large onion, chopped
6 cups mashed cooked potatoes
2 (14.5 ounce) cans chicken broth
1/2 cup milk
DIRECTIONS
In a medium soup pot melt butter over low heat, and saute onions until tender. Stir in the mashed potatoes, and then slowly add the chicken broth. Stirring, add milk (use more or less to achieve desired creaminess). Cook until heated through and season with salt and pepper to taste.

For 2 people
1 chopped onion,sweat gently add 2 chopped potaotes sweat for about 10mins.Add 3/4pt veg stock & continue to cook until potatoes are cooked. Add 1/4 PT milk.Season to taste.
I usually cook Leeks with the onion, you can also use cauliflower

Potato Soup Tip........to make non-fat potato soup, use non-fat milk and then thicken it with a packaged Cheese Sauce or Alfredo sauce......like Lowry's, etc.

peel potatoes and garlic, salt pepper
then boil together mess a little if you want thick soup.
