In the poultry market as a whole, hens are preferred. Meat quality, economic turnover for having a bird that eats little, many factors go into the choice of using hens for broilers & fryers, even as "Cornish Hens," if using the Cornish variety.
Now, sometimes you can find a Capon, a castrated rooster that develops much like a hen. They also produce good meat.
So, on the larger scale, not really. Although I've eaten a few of mine when they've become violent or too obnoxious.

The chicken we eat are both male and female. They are raised as broilers. Possibly more are male since some female will be retained for future egg laying, fewer roosters will be kept for production so if chicks are 50/50 more that get eat will be male. At 6 weeks when they are slaughtered they do not look male so maybe that is why others have said we only eat female.
In South Africa it is a different type of chicken that is raised for meat or eggs. In the meat breeds it is both male and female that get eaten. In the egg breeds the males are sold cheaply to the informal market to raise as meat birds, these type have a much slower growth rate than the meat birds. I guess in a developed nation like USA it may not be economically viable to raise a egg breed male.

its really sad because in a chicken farm, there are millions of female chickens constantly laying eggs. once the eggs hatch, they are loaded onto a huge convayer bely and people check them to see if they are a boy or girl. if they are a girl, they are let to go along the convayer belt until the workers take them into a heat room so they can grow. if workers see males, they throw them into huge barrels of trash and they leave them there to die. very few male chickens will be kept for fertilization, but for the most part they are killed. some zoos buy them off the companies to feed to their owls, falcons, and eagles. so we mainly eat female chickens and male and female eggs, but we dont know what sex eggs are.
