2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
Combine all ingredients, then roll mixture into 1inch meatballs and place on waxed paper on cookie sheets. Freeze meatballs for about 2 hours. Then place in oven at 350 degrees for about 40 minutes or until cooked through.

Soneya, it depends on what goes with the meatballs.
This recipe goes well with spaghetti
3/4 lb ground pork
3/4 lb ground turkey or hamburger
1 tablespoon minced onions
1-1 1/2 cup Italian seasoned breadcrumbs
1 teaspoon ground black pepper
1 teaspoon garlic salt
1/2 teaspoon parsley
2 eggs
in a large mixing bowl add the meat and blend together with your hands.
Add the onion, parsley, pepper, and garlic salt, mix again with your hands until all the seasonings are well blended with the meat.
In a bowl beat the eggs until well scrambled add to the meat.
While mixing in the egg add the bread crumbs 1/2 cup at a time until the meat begins to feel slightly firm.
Form the meat into 1 1/2" balls with your hands.
Gently place in cooking pan so that the meatballs are close but not touching.
Cook in pre-heated oven@ 450* for 10 mins or untill browned.
The meatballs will not be fully cooked yet.
Add to your favorite sauce and simmer for 1 hour.
This one with strogonoff
1 lb ground beef
1 medium onion, finely chopped
2 garlic cloves, minced
1 teaspoon kosher salt
1 teaspoon pepper
1/2 cup fresh breadcrumbs
2 large egg yolks
Combine beef, half of chopped onion, garlic, salt, pepper, bread crumbs, egg yolks and 1/2 cup water in a large bowl. Mix well and form into 1 inch meatballs.
Heat the oil in a large nonstick skillet over medium-high heat. Add meatballs and cook, turning often, until well browned. Drain on paper towels.

Recipe??? Who needs a stinking recipe? Experiment. Use different meats like ground beef, pork, etc. Italian sausage makes an excellent choice for Italian meatballs. Mix some stuff up just like you would a meatloaf and shape the stuff into little ball shaped things. Brown them up slowly in a pan and... WOW you have meatballs!!!

Italian Meatballs
1-1/2 pounds lean ground sirloin or chuck
3/4 cup seasoned Italian breadcrumbs
1/2 cup grated Parmesan cheese
2 tablespoons fresh chopped Italian parsley
2 tablespoons fresh chopped basil or 1 tablespoon dried
1 tablespoon garlic powder
2 eggs, beaten
2 tablespoons milk
In a large bowl, separate the meat with a fork and make a well. In another bowl, mix the breadcrumbs with the cheese, parsley, basil, and garlic; set aside.
Beat the eggs with the milk and pour into the well. Using wet hands, knead the meat to absorb the liquid and mix in the double-seasoned breadcrumbs. Knead well, keeping your hands moist, until the meat is well mixed.
Scoop the meat out and then roll with your hands to form a nice ball, about golfball size. Place about 1 inch apart or less, on a non-stick baking pan and bake at 400 degrees until golden brown.

Mediterranean Meatballs & Yogurt Feta Sauce
1 pound Ground beef
1/2 cup Fresh parsley, chopped
1 Egg
1/4 cup Dry bread crumbs
2 cloves Garlic, minced
1/2 teaspoon Salt 1/4 teaspoon Pepper
1 tablespoon Oil
1 4 oz. package Feta Cheese, crumbled
3/4 cup Plain yogurt
2 tablespoons Milk
1 clove Garlic
1/3 cup Chopped seeded tomato
1/3 cup Cucumber, chopped, peeled and seeded
1 teaspoon Fresh dill, finely chopped
Mix meat, parsley, egg, bread crumbs, minced garlic, salt and pepper. Shape into 1-inch meatballs.
Heat oil in medium skillet on medium-low heat. Add meatballs. Cook 12 to 15 minutes or until cooked through, stirring occasionally.
Meanwhile, place Feta cheese, yogurt, milk and 1 clove garlic in food processor or blender container cover. Process until smooth. Mix in the chopped tomato, chopped cucumber and the dill. Serve meatballs with cocktail picks and dip in yogurt sauce or on pita bread.

Simple ingredients for meatballs are minced meat and seasoning and herbs although this is optional. Here is one of my recipes that calls for meatballs (just use the meatballs recipe if you like), if you are interested.
Spicy Spaghetti & Meatballs
Ingredients:
250g/8¾oz minced/ground beef
1 egg - beaten
100g/3½oz strong flour (i.e. bread flour)
600g/1lb 5oz tin of chopped tomatoes
1 onion - finely sliced
2 cloves garlic - minced
1 large red chilli with seeds - thinly sliced (Add 1 or 2 birds eye chillis if you like it hotter)
red wine - about a glass (or slightly more if you are anything like me )
90ml/3¼fl oz olive oil
handful of flatleaf parsley - finely chopped
100g/3½oz cheese
white and black pepper and salt - to taste
a few dashes of Worcestershire Sauce - optional
Method:
1. In a large bowl, mix the minced beef, egg and parsley together. Season with worcestershire, salt, white pepper and black pepper to taste.
2. Take a teaspoon of mixture and in your hand, roll into a ball. Dust the ball in flour and put to one side. Repeat with the rest of the mixture.
3. In a large frying pan, gently saute the onions in olive oil until soft. Add the garlic and chilli and fry till it's fragrant.
4. Make sure the frying pan is very hot, then add in the meatballs and fry gently until golden brown.
5. Add the red wine and simmer for approximately 2 mins. Once almost all the wine has evaporated, pour in the chopped tomatoes. Season to taste and cook for about 5 mins.
6. In the meantime, cook the spaghetti until al dente.
7. Mix well and serve with grated cheese of your choice.
Enjoy and good luck with the meatballs.

Meatballs:

Hey, my meatballs are brill. Get some lean steak mince, place in a large bowl, crumble in 2 oxo cubes, loads of pepper, sprinkle of salt, mixed herbs, cut up some tiny cubes of smoked bacon, finely chopped onion, spoonfull of mustard, sprinkle of chili powder, some paprika, blob of Heinz tomato ketchup, spoonful of horseradish, crushed garlic, and any other spices you want to chuck in, sprinkle in some fresh breadcrumbs, and some Parmesan cheese, get yolk of egg chuck in and then kneed with hands making sure all ingredients are combined. On a floured board with floured hand divide mixture into even pieces roughly the size you want t balls and roll into shape, shallow fry on low heat in some olive oil and butter, then place in oven with whatever sauce you like continue cooking for a further half hour. I've done them with gravy bolognase sauce but our favourite is chili sauce, served with rice and crisp iceberg lettuce, with a mint sauce dressing, natural yogurt, pinch of sugar and some mint sauce mixed in. Mince beef a chopped onion flour & egg and water to stick it together, roll the beef & onion into balls (add some herbs if you feel fancy!!) use the egg flour & water to stick the beef and onions together & mix in the bowl before you roll in to balls!! then cook in a preheated oven at 150/200degrees F & serve with bolognaise sauce & pasta!!! Enjoy!! x
