We are married, have one child. Would we go with "married filing jointly"? Or would he just do head of household and I do married filing jointly. I'm confused.

If you are married, you only have two choices:
1) Married - Filing Separate
2) Married - Filing Jointly

Filing Jointly almost always is better.

Since you're married, neither of you may file head of household. You can either file one return together, as "married filing jointly", or each file as "married filing separately". You almost always come out better filing jointly.
