i am going to get a hog and need some help on how to clean it? i have not a clue where to start?

Well, we here in LA don't skin the hog, we dip it in a tub of boiling water & use a large sharp scapel-like thing & shave the hair off. Of course we save the inards to make boudin & use the head to make head cheese. Of course we cook the hog whole a number of different ways, over an open flame for about 12 hrs or a cajun microwave, which is a large wooden box, the seasoned hog is placed in the box, then a sheet of tin like is placed over it & charcoal is placed over it & it's cooked until it's done, several hours. The skin happens to be one of the best parts. Or if you skin it, then we make cracklins with it.

I can suggest that you call a meat packing plant or the place where you are getting the pig from and ask them for directions.
