I've got some aging banannas and time...

BANANA BREAD:

1 cup sugar
1/3 cup margarine or butter, softened
2 eggs
1 1/2 cups mashed ripe bananas (3 to 4 medium)
1/3 cup water
1 2/3 cup all-purpose flour*
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chopped nuts

Heat oven to 350 degrees. Grease bottom only of loaf pan. 8 1/2 x 4 1/2 x 2 1/2 or 9x5x3 inches. Mix sugar and margarine in 2 1/2-quart bowl. Stir in eggs until blended. Add bananas and water; beat 30 seconds. Stir in remaining ingredients except nuts just until moistened; stir in nuts. Pour into pan. Bake until wooden pick inserted in center comes out clean, 8-inch loaf 1 1/4 hours, 9-inch loaf 55 to 60 minutes; cool 5 minutes. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing.


*Do not use self-rising flour in this recipe

You can substitute all applesauce or more banana for the oil/butter, but the result will be a dryer end product. I usually only substitute about 75% - at the most - that way if the recipe calls for 1 C of oil, I still have 1/4 cup in there, and it keeps it moist, but not as dense or as bad for you. The bread won't be quite the same, but it's still quite yummy.

Banana Nut Bread:

This is a wonderful and easy to make banana nut bread.
you can also do a variation adding one cup of Milk Chocolate Morsels

2 tablespoon(s) Milk
1/3 cup(s) Butter
3/4 cup(s) Sugar
2 loaf(s) Eggs
1 3/4 cup(s) All-Purpose Flour
1 teaspoon(s) Baking Powder
1/2 teaspoon(s) Salt
1/2 teaspoon(s) Baking Soda
1 1/4 cup(s) Mashed ripe bananas
1 cup(s) Chopped wlanuts
1/2 teaspoon(s) Cinnamon

Preheat oven to 350F. In a large bowl, cream together milk, butter and sugar. Add eggs and beat well. Mix in the flour, baking powder,salt,cinnamon and baking soda. Stir in bananas and nuts, blending well. Pour into greased 9x5x3 inch loaf pan. Bake for 50 minutes or until center tests done. Remove from pan and cool on rack. Wrap tightly to store.
One loaf yields about 10-12 slices.

Yield: 10 servings

175g. Self-raising flour

125g. Butter, melted

150g. Sugar (Fairtrade)

2 large eggs

4 small very ripe bananas (about 300g weighed without skin) mashed (Fairtrade)

1 teaspoon real vanilla extract


Preheat the oven to about 150 degrees C for a fan oven (a little more for a conventional oven.)

Add the sugar to the melted butter and mix. Then beat in the eggs then the mashed bananas and vanilla extract.

Add the flour gradually.


This amount will fill approximately 12 large muffins cases and will take about 15-20 minutes to cook.

If you want to make more, smaller muffins decrease the cooking time

If you want to make one large cake increase the cooking time to approximately 40 –50 minutes depending on the size of the tin.

Don’t worry about the times too much. It is easy to check. Test with a toothpick or skewer. If the cake is done the skewer will come out clean.

You can also tell by pressing the surface carefully, the cake will feel springy when it is cooked.

The fun thing about cooking is learning to experiment. This recipe can easily be adapted by adding any of the following:

Fairtrade chocolate for a special treat (chopped into small chunks) or place one square in the middle of each muffin sized cake before cooking.
A little Fairtrade cocoa powder
Walnuts (if nuts are not a problem)
Sultanas - try soaking them in Fairtrade or local fruit juice for a few hours to make them extra juicy and yummy.

Have a go at the simple version first then don’t be afraid to try adding other ingredients if you want to.

The Bestest Banana Nut Bread
(kids named it)

2/3 cup walnuts (2 1/2 ounces)
2/3 cup pecans (2 1/2 ounces)
3-4 bananas, very ripe, mashed to equal 1 1/4 cups, plus
1 whole banana (to garnish)
2 extra-large eggs
1 1/2 teaspoons pure vanilla extract
4 ounces unsalted butter, chilled and cut into 1 inch cubes
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1 teaspoon ground cinnamon
3/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves (scant)
1 tablespoon poppy seeds
1/2 cup granulated sugar, plus
1 teaspoon sugar, extra for sprinkling
6 tablespoons light brown sugar, lightly packed
1 1/2 cups unbleached all-purpose flour
lightly coat a six Cup capacity loaf pan, with melted butter.
Adjust the oven rack to the middle position and preheat the oven to 325 degrees.
Spread the nuts pn a baking sheet and toast in the oven until lighly browned, about 8-10 minute.
Shake the pan halfway through to ensure that the nuts toast evenly.
Cool, chop coarsely, and set aside.
Turn the oven up to 350 degrees.
In a medium bowl, whisk the banana puree, eggs, and vanilla extract to combine.
In the bowl, of an electric mixer fitted with a paddle, attachment, cream the butter, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and poppy seeds on low, 2 to 3 minutes, until softened.
Add the sugars and turn the mixer up to medium, mixing another 3 to 4 minutes until fluffy, scraping down the sides of the bowl as needed.
Add the flour and banana mixture alternately in three batches, beginning with the flour, mixing until just combined.
Remove the bowl from the mixer and fold in the nuts.
Pour the batter into prepared loaf pan to just below the rim.
Cut two 1/4 inch thick strips from the remaining banana, slicing down the entire length.
Arrange the two C-shapes on top of the loaf, staggered, with the two ends slightly interlocking with each other in the center.
Sprinkle about one teaspoons.
of granulated sugar over the surface.
Bake for 50-60 minutes until nicely browned and firm to the touch.
Do not slice bananas for the top too thickly or they will sink.

Well,You can look it up on a website.Then toast it up and add melting butter yum!
