Oh god, in what way hasnt he influenced art?
He is the father of all things from his time. Every movement, every painter credits their work to him, even i do!
He did something no one else did in his time. He changed how we think of color, composition, abstraction, brushstrokes... everything. If there was no van gogh, there would have been no picasso. No pollock. No fauvism, cubism, die brucke, art nuveau, nothing.
Look through a big collected book about artsists, and movements, past his time, and tell me how many say in there "Was influenced by artists like Van Gogh...."
In the art world, we say that two people were the most influential;
Van Gogh, and Marcel Duchamp.
I wonder who Duchamp was influenced by? ;)

Well he also influenced the public's perception that artists are all crazy and don't sell any paintings in their life and live in poverty and then commit suicide and then their work is worth millions of dollars...
Aside from that... formally, I think his biggest influence was the was that he used vibrant colors and brushstroke to indicate movement.

one of the most unique things about him was that fact that he sold one painting in his life and that was for less than 100.oo sold by his brother now ihs paintings are worth hundreds of millions ... for me as a painter his influence was his devotion and love for his brother who worked at keeping food on vincents table while he painted in "Letters to Theo" Vincent pours out his heart about how he feels about his art and his life and his love and respect for his brother Theo and it is hard to imagine any one else doing a better job of trying to stumble thru their feelings putting into words what they painted on canvas

for example :
