1 lb plain flour
4 eggs
Pinch salt
Semi skimmed milk
Pre heat oven to 210c/gas 8. Put greased muffin tins into heat. Mix flour,salt,eggs and enough milk to make batter,it should be the consistency of cream. Pour batter into hot tins and bake for about 40 mins. The semi skimmed milk gives a light texture

Everybody has their own perfect recipe and no doubt will trash mine ! But here goes...
4oz plain flour, pinch of salt, 2 medium eggs, 200ml milk (or 50% milk and water) Sift the flour into a large bowl with the salt. Crack the eggs into another small bowl and beat until just foamy. Add the eggs to the flour and beat in half of the liquid. Beat for a minute and then add the remaining liquid. Beat for three minutes and rest with a teacloth over the mixture for 1 hour. Put your pudding tins on the top shelf of the oven with a good sized knob of Beef Dripping or Lard and heat the oven to about Gas Mark8 (or equivalent) until the fat is smoking ! Ladle in the mixxture to just generously cover the base of the pudding tin hollows. Bake for 30 minutes. Do not open the oven for at least 15 minutes or they will sink. Turn over when crispy to cook the underside. Makes about six nornal size puddings. Enjoy !! Good Luck from a Leeds lad, born and bred on Yorkshires !

The best way is don't follow a recipe, and it takes ages to work out the right proportions, I have found using 3 eggs and use a pint of milk that has been left out for a while, not straight from the fridge works well and once you have made the mixture let it stand for an hour or 2

Grahm is on track. Do all that, mix in fat drippings, make batter and bake. That's how I learned to do it. Watch the salt, though.

use water not milk in your recipe, allow to stand for an hour then re-whisk and cook in a very hot oven
