i think but am not sure it relates to the furniture fixture itself not the establishment you are seated at the bar a long tall table w/ stools and the bartender behind it mixing and serving its an easy way to distribute the drinks to patrons without tables and waitresses (like a short order cook) you are seated at the bar

Just a guess, but I think it has to do with that fact that alcohol was shipped/stored/served in barrels. Bar being a shortened form of the word.
