i use it alot to cook everything from fried chicken to anything that calls for oil, such as rice-a-roni for example. is this healthy!? i have no idea. Thank you!

It is not so much the oil that you use to cook with as it is your cooking methods. You must have the oil very hot and when you place the food into the hot oil , the food does not absorb the oil. Put food into cool oil and it will be greasy every time. I like to use Peanut oil because it can be heated to 390 degrees f. safely.
So when you read about the different oils, Palm, Coconut, Corn, Canola etc. please remember that it is how much oil actually goes into the food that is important.
I am not really sure if any of that makes much of a difference. I have see very healthy Native Americans eat raw whale blubber by the pound. Because I grew up on a farm in Indiana, I have always liked to cook with Lard. I am 70 and in excellent health. So , does it really make any difference ?

Peanut oil, while high in poly and monounsaturated fats, have a lop-sided Omega-6:Omega-3 ratio.

Omega-3 fatty acids are anti thrombic and anti inflamatory. Omega 6 fatty acids are pro thrombic and pro inflamatroy. Both are polyunsaturated fats and the right balance between the two are neccessary for good health.

Oils like Olive Oil for low temp cooking (> 200°F) would be better and bring tons of flavor. When doing high temp cooking, I opt for Canola Oil over Peanut oil everytime. Canola's smoke point is > 400°C and therefore, could do the same job peanut oil can for frying at high temps. What's better about Canola is that it is rich in Omega-3's.

I've used it too, it doesn't feel all that healthy to me. It might be, but it does feel like extra greasy or something!
