Use a non stick pan.
Beat three eggs in a small bowl ( some people add a little bit of milk to their eggs- this is up to you though- about a china cup full) You can add a dash of salt or other seasoning .
Melt 1/2 teaspoon of butter in pan over low -medium heat. Twirl butter around in pan.
Add eggs and let it set a little- it is at this time you can add grated cheese, or cooked mushrooms , or chopped bell pepper on one side of the omellete leaving a little bit of edge with out the filling. Or, leave it plain. Now flip one half of the omellete over the other so it can seal together. When cooked just flip out on plate. Serve with freshly sliced tomatoes.

I would recommend the book Omelettes, Souffles, and Frittatas
by Lou Seibert Papas if you decide you like them and would like to take them a bit more seriously. If you want a plane Jane guideline, here it is:
Two eggs
Dash salt
Combine, beat
Cook in 8 inch pan on medium heat
Wait for the bottom to firm up then use whatever technique suits you to shift the omelette in the pan to cook the egg fully. Add the cheese of your choice to the top of the omelette. I typically fold in thirds as I transfer it to a plate.
Edit: Oh, yes, do not forget to either use some butter or Pam in the pan before you cook! Also, check out the link for the book.

Start by making scrambled eggs by pouring the eggs into a frying pan. Wait until it is almost done, place the cheese on top and then flip it over on one side.

Beat 2 eggs, pour it into little oil round fry pan when bottom set, put grate cheese on top then put it under the grill. You will see the egg set and cheese mild. Fold and serve, hmmm!

take 1 or 2 omlette
break it in a bowl.add salt,pepper,chilly,and all masala u want to add
add chopped onions if u want
put frypan for heating spread oil on it remember tht amount of oil
and how u spread it on the pan will determine the correct shape 2 uor omlette ie spread it evenly all over
keep it frying till brownish yellow
serve it as u want!!!!!!
and remember 2 switch off the gassssssss!!!

half handful grated cheese 2 eggs beat together pour on fry pan leave there when you can slip egg flip under without it sliding or sticking together then turn and do the same
