Well last year we made one. It lasted 2 days. 2 days was very safe. It was yummy. I know of other people that have had one at least a week. Any longer than that they would be pretty dry and hard. As long as there is no mold then it is safe.

depends on where you keep it and which parts you are wanting to eat. In the fridge it will last longer. Most of the candies can be eaten for a LONG time.. a few weeks even. And are you using actual Gingerbread or are you going the Graham cracker way? The Graham crackers will get pretty stale within a few days and the bread pretty hard...

Gingerbread houses made with hard candy and royal icing are safe for up to 2 months provided that they are kept free from dust and insects. If you plan on eating your house you should wrap it in plastic. Most houses are made for display purposes only.

Use a thin layer of white frosting, and then sprinkle with coconut. The frosting will allow the coconut to adhere to the cake and not fall off as easy. Cooked, candid white rice. Mashed potato flakes. If you can keep cold until the last minute, you can also use whippped whipping cream. If you know of a white colored hard candy, you could also use that. Just toss them in the food processor to crush. Also if you know of a 'white' cereal, that would also work.
