"Lo extraño" and "No puedo dejar de pensar en usted" are more formal, you don't talk like that to a person you love.

If you say that to someone is because youu know that person, so you don´t have to use the formal way, but if you wan't to know that, the formal way is this:
"I miss you"
Le echo de menos
or
Le extraño
"Can't stop thinking of you"
No puedo parar de pensar en ustéd
or
No puedo dejar de pensar en ustéd

i miss you = te extraño (more common) or me haces falta or te echo de menos
can't stop thinking about you = No puedo dejar de pensar en ti or no dejo de pensar en ti
