The cool thing about a salad is that you can put anything you want in it. So there are plenty of recipes of potato salad.
The one I know includes potatoes (boiled and diced), sausages (boiled too and sliced) and onions or shallots (cut thinly). You can choose your dressing (I personnally prefer French vinaigrette).
You can eat it warm or cold, as you wish (or as your husband wishes...)

INGREDIENTS
5 pounds red potatoes, diced
4 eggs
4 stalks celery, chopped
1 green bell pepper, chopped
1 (16 ounce) jar sweet pickles, cubed
3/4 tablespoon prepared mustard
3/4 cup mayonnaise
1 onion, finely chopped
1 teaspoon white sugar
salt and pepper to taste
DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl.
Place eggs in a medium saucepan, and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and peel under cold, running water. Chop, and set aside.
Stir the eggs, celery, green bell pepper, sweet pickle cubes, prepared mustard, mayonnaise, onion and white sugar into the potatoes. Season to taste with salt and pepper. Cover, and chill in the refrigerator for at least 3 hours before serving.

"Hidden Valley Potato Salad" - Serves 4 to 6
1 (1 oz.) packet Hidden Valley Original Ranch Dressing Mix
1/2 cup mayonnaise
1/4 cup water
8 medium potatoes; boiled, peeled and cubed
1 cup sliced celery
1/2 cup chopped red onion
Combine dressing mix with mayonnaise and water. Add potatoes, celery and onion; toss to coat. Chill.

Southern Potato Salad:
Boil Potatoes till soft - but not mushy - you won't cook them quite as long as you would for mashed potatoes because you don't want them to mash while you are stirring in the rest of your ingredients
Boil 2 eggs
After you cook and drain your potatoes you will add mayonnaise (Dukes mayo is best but if you don't live in the south you probably can't find it and Kraft will work) add mustard - add sweet relish - add onion chopped finely -add salt and pepper -
I can't give you exact amounts you will have to do it to taste and practice, but start with:
5-6 med to lg potatoes
2-3 heaping tablespoons of mayo
1-2 teaspoons of mustard
2 teaspoons sweet relish
1/2 Sm to med yellow onion
2 med to lg boiled eggs masked up with fork or finely chopped (easier to just mash them)
just takes a little practice

boil potatoes & dice them.. grind mint leaves with green chillies add salt to taste.. (make a paste) pour the mixture over the diced potatoes & refrigerate it.. serve chilled... u culd also add diced tomatoes / cucumbers to it.. garnish it with fresh cut cilantro ( coriander) .. to the ground paste u culd add lime / tamarind sauce.. to add a tangy taste..
