good holiday recipes for side dishes/ desserts? I want to make something diffrent thats not fudge or pumpkin or pecan pies. Thanks lots! God bless!!!

So delicious, everybody asks for the recipe!

Baked Corn

INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

My palate loves this, but, my arteries don't ! Basically, it's mashed potatoes with mozzarella cheese baked inside a bacon wrap. You will need a deep, small round casserole dish. I use the Corning small round casserole. I think it's about one quart. Make very smooth mashed potatoes. I usually like to saute my onions in the butter before adding to the mashed potatoes, but, whatever is your favorite. Add about 1 cup of shredded mozzarella cheese and stir in. Now, take about 1 pound of thick sliced bacon and line the casserole dish. Place one end of the bacon strip in the center of the bottom of the casserole dish. Continue doing this all around the casserole dish, slightly overlapping the bacon slices. The slices need to have a good overlap so that none of the mashed potatoes seep out when you bake it. You should have some of the bacon stip hanging over the outside of the casserole dish. Fill with the mashed potatoes. Refrigerate until needed. This will also freeze well, as long as the bacon wasn't pre-frozen. When you are ready, just put it into the oven, about 375 degrees F for about an hour. Longer if you froze it ( no need to defrost ). To serve, invert onto the serving dish and hold your breath. If it collapses, you put too much cheese in. Use less the next time.

Here are a couple of family favorites...

Spiced Acorn Squash
3 acorn squash
3 tbsp. Honey
1 tsp ground ginger
1/4 tsp nutmeg
2 tbsp butter
salt and pepper

Mix butter, honey, spices, salt and pepper in measuring cup. Heat in microwave until butter is melted. Cut squash in half and remove seeds. Arrange cut side down in shallow baking dish and bake 30 min at 375 degrees. Turn cut side up, pierce with fork, but do not puncture skin, and spoon butter mixture into cavities of squash.
Bake 30 to 40 minutes or till tender
Squash can also be cooked in microwave until tender. Fill cavities with butter mixture and microwave until tender.
Serves 6

This is easy and really yummy!

Lemon Chess Pie
2 c sugar
½ c butter
1 c milk
5 eggs
1 Tbsp flour
1 Tbsp plain cornmeal
1/4 c lemon juice
grated rind of 3 lemons
1 unbaked 9 inch pie shell

Cream sugar and butter till light and fluffy. Add milk and eggs and beat well. Add flour, cornmeal, lemon juice and rind and mix well. Pour into pie shell. Bake at 350 degrees on cookie sheet for about 30 minutes. Place cookie sheet in oven while preheating. Cool on rack. Serve while slightly warm or when cool.
Refrigerate and cover any leftover pie with plastic wrap.

This recipe is always a hit at my holidays! A great side dish:

Sweet Potato Casserole


2 ½ lbs. Sweet potatoes
2 eggs
1 tsp. Finely chopped orange peel (I omit)
¼ cup packed lite brown sugar
1 tsp. All spice
¼ cup melted butter
½ cup milk
¼ cup lite molasses
½ tsp. Salt


Cook potatoes in enough salted water until tender. (About 1/2 hour). Drain.
Heat oven to 350.
Beat eggs, add remaining ingredients and mix until smooth.
Stir mixture into potatoes.
Spoon into a buttered 1 ½ quart casserole dish and bake until puffed – about 1 hour.

How about fondue? You can have a fondue pot of cheese with pieces of bread and some veggies to dip into the cheese. Then you can have a fondue pot of hot broth with veggies, shrimp, chicken, mushrooms to cook in the hot broth. And of course, what about chocolate for dessert? Cut up pound cake, have strawberries, bananas to dip.... yum, I'm getting hungry which is not a good thing.
