8 oz 70% cocoa bittersweet chocolate,melt with 8oz sweet butter,whip 4 egg whts with 1cp powdered sugar,whip 1pnt 40%whipcrm with 1cp powdered sugar and 1tsp vanilla in a separate bowl. fold but choc mix into egg whites, fold in half of whip cream fill Oreo cookie pie crust till just under level. cook in preheated 375f oven for 30 minutes take out let cool, put in freezer over night. fold together remaining whip cream with remaining mixture top pie serve very chilled. Boiled fruit cake with custard or cream goes down well in my household, you could try white Christmas or even gingerbread Santa's or stars or trees depending on the age of those you will have at Christmas, another favourite is trifle. But really choose something that the people who will be there already enjoy. Alabama Chocolate-Pecan Jumbo Christmas Fudge Pie

Ingredients :
1 1/4cupchocolate wafer crumbs
1/3cupbutter melted
1/2cupbutter softened
3/4cupbrown sugar
3xeggs
12ozsemisweet chocolate chips
2tspinstant coffee
1tspvanilla extract
1/2cupflour
1cuppecans coarsely chopped
whipped cream sweetened
chocolate syrup
maraschino cherries with stems
mint sprigs
Method :
* Combine chocolate wafer crumbs and 1/3 cup melted butter; firmly press on bottom and sides of a 9-inch tart pan or pie plate. Bake at 350F for 6 to 8 minutes.
* Cream 1/2 cup softened butter; gradually add brown sugar with the electric mixer at medium speed until blended. Add the eggs, one at a time, beating after each addition. Stir in the melted chocolate, instant coffee granules, vanilla extract, flour and chopped pecans.
* Pour into the prepared crust. Bake at 375F for 25 minutes. Remove from oven and cool completely on a rack.
* Before serving, pipe sweetened whipped cream on each piece and drizzle with chocolate syrup. Garnish with cherries and/or mint if desired.

British Mince pies with Custard
Ingredients:
8 oz butter, softened
1 lb all purpose flour
2 oz icing sugar
2 egg yolks
1 lb mincemeat
beaten egg, to glaze
bun tins to make 30 pies
Cut the butter into cubes. Sift the flour into a mixing bowl. Add the butter and, using your fingertips, rub the butter into the flour until it resembles fine breadcrumbes. Stir in the icing sugar. Make a well in the centre, stir in the egg yolk and about 3-4 tbsp iced water to make a soft but not sticky dough. Knead lightly to form a smooth dough (if there is time - chill for 30 minutes). Preheat oven to mark 400F or gas mark 6.
On a floured surface, roll out two thirds of the dough and cut out 30 rounds using a 2-½ inch fluted cutter. Use to line the bun tins. Fill with mincemeat*.
Re-roll remaining pastry and trimmings and cut out circles using a 2 in cutter. Dampen edges of circle and place on pies. Seal edges, brush tops with beaten egg and cook for 20 minutes.
Custard:
Ingredients:
1 cup heavy cream
3 egg yolks
2 tablespoons Splenda
1/2 teaspoon vanilla extract
Directions:
1. Heat the cream (and chocolate, if required) gently in a small pan. Whisk the egg yolks, Splenda and vanilla extract together in a medium bowl until smooth. When the cream is just coming to the boil, pour it into the egg mixture and whisk well. Return the mixture to the pan and heat again for another minute or so, whisking all the time until the mixture thickens. Be careful not to overcook or the mixture will curdle! Pour immediately over any hot or cold dessert and enjoy!
Serves 4.
For chocolate custard just add:
1 ounce chocolate from a 3.5 oz bar of Lindt Excellence 70% Cocoa Chocolate.
Another option: serves mincepies with fresh cream.

make a basic sponge cake and Cinnamon
get a steam bowl grease the inside the bowl
spread some sweet mince meat in the bowl
pour cake mixture in and cover
get a large sauce pan
place bowl in sauce pan
fill half way with water
bring to boil
let it continue to boil until sponge cooked
DO NOT LET IT BOIL DRY
take bowl out of sauce pan
take cover off
slide knife around cake to loosen it
place plate over the top
turn upside down
serve warm and with double cream

Make a trifle. Similar to, though more elegant than, a "dump cake." They are very pretty and really easy. You can find recipes all over the internet, but I love the Food Network. You can just pick your favorite holiday flavors and you'll find a recipe - cranberry orange, gingerbread, chocolate, whatever!

Make somthing like apple strusel or cherry pie.. Very good for cold weather. Make somthing warm and inviting. Plus the apple strusel and apple pie make a house smell delicious.

Mango Float. Its so easy to make. Just combine ripe mango slices, cream, sweetened condensed milk and raisins (optional). Crush cookies or graham crackers, use this to line your baking pan, this will serve as your first layer, cover the first layer with the mango mixture, repeat last two procedure lasagna style. Chill then serve.
