the strip steak are from the loin. the sides are sawed into quarters the loin and round are one of the quarters, the loin is sawed from the round and this is where the t-bone and the strips are taken from, as well as the tenderloin. the name new york is just added on to the steak there are kc strips new york strips and the are the same. there are several cuts of strips the 0 by 1 strip the 1 by 1 and the 2 by 3 are all cuts of strips.
