Roemoulade Sauce(The Classic Seafood Dipping Sauce)

Ingredients

1 c mayonnaise
1 ts capers
2 tb green onions; (minced)
1 ds tabasco sauce
1/3 c chili sauce
1 tb horseradish
1 1/2 tb creole mustard
1 ds ketchup
1 salt and pepper to taste

Instructions

Combine all ingredients and mix until a uniform color. Refrigerate.

Crab Dip Recipe Crab dip recipe is made with mayonnaise and crabmeat and hard cooked eggs. INGREDIENTS: 1 can (7 1/2 ounces) crab meat, drained and flaked 1 hard cooked egg, chopped 1/2 cup mayonnaise 2 teaspoons lemon juice 1/2 teaspoon dry mustard 1/2 teaspoon onion powder 1/4 teaspoon salt 1/8 teaspoon black pepper PREPARATION: Combine crab, hard cooked egg, mayonnaise, and remaining ingredients; mix to blend well. Cover and chill crab dip. Serve crab dip with assorted crackers. Makes about 2 cups of crab dip.

Try the above. It is the "dressing" recipe for Crab Louis. You can either drizzle the dressing over the crab cakes or you could even dip them in this if the cakes are firm enough. Either way...this dressing goes wonderfully with crab. Try it out.

HOLLANDAISE SAUCE

1/4 cup butter
1/4 cup cream
2 egg yolks, beaten
1 tablespoon freshly squeezed lemon juice
salt to taste
pinch of cayenne pepper
pinch of paprika
1 teaspoon freshly minced parsley

Melt butter in the top of a double boiler. Stir in cream and beaten egg yolks. Whisk together. Add salt and lemon juice. Cook over boiling water in a double boiler until mixture thickens, stirring constantly.
Remove from heat and beat with a whisk until light. Stir in cayenne pepper, paprika and freshly chopped parsley, if desired.

A mild salsa or tartar sauce enhanced with a bit of wasabi. Offer both if you can.

Spicy aoli. Take mayo, add fresh diced garlic, cayenne pepper, (or other pepper if you like), stir and dip. Yum!

Cocktail sauce or tarter sauce work great as a dip.

The easiest is either tarter sauce or cocktail sauce just buy in the store put it in a serving dish and say you made whos going to know
