Sister-in-Law made this today
Linguine and Smoked Turkey
Ingredients:
1 pound Linguine or Spaghetti -- uncooked
2 cups broccoli florets
1 tablespoon margarine
1 large onion -- diced
2 carrots -- sliced into 1/4 inch rounds
2 stalks celery -- diced
2 tablespoons all-purpose flour
1 14-1/2 ounce can low-sodium chicken broth
1 teaspoon ground sage
2 cups smoked Turkey breast, diced
1/4 cup herbed stuffing mix
Procedure:
Prepare pasta according to package directions. Two minutes before pasta is done, add broccoli florets to water. Cook two minutes; drain pasta and broccoli in colander.
In a large skillet, warm the margarine over medium heat. Add the onion, carrots and celery and sauté three minutes. Stir in the flour. Add the chicken broth and sage and stir in the turkey. Stir until the sauce comes to a simmer. Simmer 1 minute.
Pour the turkey sauté over the pasta. Sprinkle the stuffing mix on top and serve immediately.
Serving Ideas : Heat this wonderful dish one of two ways, either in an oven proof dish placed into a pre-heated oven (350 degrees) or in a heavy pan on the stove, make sure internal temp reaches 165 degrees.
Serve with fresh bread or a salad

For Thanksgiving, I wanted to try something different for dessert. I stumbled upon a recipe for an old New England pie called Marlborough Pie and it was wonderful! Everybody loved it!
Marlborough Pie
Unbaked 9" pie shell
1 c. unsweetened applesauce
3 tbsp. lemon juice
1/2 tsp. lemon peel
1 c sugar
4 eggs, slightly beaten
2 tbsp butter, melted
1/2 tsp salt
Chill pie shell while preparing filling.
Combine applesauce, lemon juice and peel, sugar, eggs, butter, and salt. Blend thoroughly and pour into pastry-lined pie pan.
Bake in very hot oven (450 F) 15 minutes; reduce heat to 350 F and bake 10 to 15 minutes longer, or until silver knife inserted halfway between center and edge of pie comes out clean. Cool on rack.

a tomato-onion bagel with fresh mozarella,sliced tomato and fresh oregano! just because here in mexico you only get bagels and fresh mozarella-the closest to italian style at sam's ,since i'm not a member..........i don't always get these.today i was invited there and bought the aforementioned foods!that is why it was specially delicious.
