Per Wikipedia: "White chocolate is a type of chocolate, based on cocoa butter without the cocoa solids. It also includes milk solids, sugar, lecithin, and flavorings (usually including vanilla). Cocoa butter is the ingredient used in other chocolates so that they remain solid at room temperature yet melt easily in the mouth. Thus, white chocolate has a texture like that of chocolate but does not have the same taste."

Chocolate

Where do I start? Chocolate in practically any form is heaven but there are differences. When cooking, look for the percentage of cocoa solids (the stuff from the original cocoa bean) the chocolate contains. Really good chocolate - the sort used in these recipes - starts at 70% and up. I have tasted 99% cocoa solids chocolate, but it's not for the faint hearted... Good makes include Lindt and Green & Blacks. Most supermarkets also do an own-label continental plain chocolate which is just fine.

White chocolate isn't really chocolate at all, but is delicious none the less. The only thing to watch is when melting it, do so very very gently as it can go grainy at the drop of a hat. Again, Lindt, Green & Blacks and supermarket own brands are fine.

White chocolate is NOT really chocolate. It is simply vanilla flavored candy with the same texture/consistency of chocolate.

REAL chocolate has cocoa in it, and cocoa butter is not at all the same. I am allergic to chocolate. I am not allergic to white chocolate, as it is not truly chocolate.
