Needless to say that if you go to add remove program you won't see anything. You go to add/remove windows components again there is option to completely uninstall IE but not just IE7.
Ok so here is how you do it -
start->control panel->add remove programs->at the top check "show updates" radio box->scroll down in the list->you will see IE7 listed, uninstall that, restart and you are on IE6

To remove IE7 and simultaneously get back IE6 go to:
Start
Programs
Accessories
System Tools
System Restore
then select "Restore my computer to an earlier time"
click on next
use the calendar to select a restore point at a date/time BEFORE you installed IE7
click on next, then next again
and the restore operation will start
It will take a while and will reboot your computer, but unless you have made some significant changes, your computer will be pretty much exactly the same as it was on the date/ time you selected. Be careful with this because ALL changes you made after that date/time will be gone but not permanently. Usually that's ok. but you can "undo" the whole restore operation and you will be back where you started. The system restore is for this case - eliminating a program you don't like or one that messes up your computer.

You can go back to IE6. Either through uninstall or through system restore. Only prob though...
If your system was not absolutely free of any malware, then you may be screwed. Since you are a fan of IE6, I will presume that your system may well be infested. You can try to remove it but I do not guarantee success...
I do not make any judgments based on your preference. Nor do I judge you nor know how clean your system is. I use FF2 and have used FF for several years and have not touched IE at all but for certain sites that I have to visit for work and then those are using IETab which is a plugin for FF which allows me to view IE pages in FF using IE as the engine to run the site. Not perfectly safe but better than running IE straight.

Yes, you can go to your control, add/remove programs folder and click to remove it from the list, during which time it will give you several options, one is to remove the new changes which will automatically set you back up with your old version. Yes, and fortunately it's easy.
Click Start-Settings(may not be there)-Control Panel
Open Add/Remove Programs
Find it in the list, and click Remove or Modify on the right.
Done (IE6 will show up again when you reboot)!

Go to add/remove programs, it is somewhere in there, remove it. It will go back to 6 like before.
