Probably called Pigs in the blanket. I make Pigs in the blanket by wrapping a canned biscuit around sausage so sausage wrapped in a pancake is about the same thing.

I know if they are wrapped in a pastry they are called "pigs in a blanket" but I don't know for sure if pancakes are the same thing.
