have a nice ham bone left over and would like a recipe for potato soup im not all that experienced in the kitchen but can manage with instructions

6 potatoes, peeled and cubed
1 onion, chopped
1 carrot, grated
4 slices crisp cooked bacon, crumbled
salt to taste
ground black pepper to taste
1 tablespoon chopped fresh parsley
1 tablespoon margarine
1 tablespoon rendered bacon fat
4 cups milk
3 tablespoons dry potato flakes
DIRECTIONS
Place potatoes and chopped onion in a deep stock pan, and add water just to cover them. Bring to a boil, and cook until tender.
Add butter or margarine, bacon bits and fat, and carrots. Stir in milk, parsley, and instant potatoes; bring to a light boil. Salt and pepper to taste. Cover, and simmer on low until you are ready to eat.
you could leave out the bacon and just use your ham bone

INGREDIENTS
Ham bone
8 pounds potatoes, peeled and cubed
1 small onion, chopped
2 tablespoons butter
2 cubes chicken bouillon
2 tablespoons dried parsley
6 cups water
2 cups milk
1/2 cup all-purpose flour
DIRECTIONS
Place the potatoes, onion, butter, chicken bouillon cubes, parsley and water into a slow cooker. Set on low and let cook for 6 to 8 hours. Take out bone and pick of meat and re-add to the mixture.
At least half an hour before serving, stir together the milk and flour until no lumps remain, and mix into the soup. Cook for 30 minutes or until the soup is thickened.

German Potato Soup


Serves 6

1 medium - Onion, sliced
Cooking oil
1/4 cup - Butter
3 medium - Leeks (white part only), sliced
2 pounds - Potatoes, peeled & sliced
1 - Ham bone
1/4 teaspoon - Dried thyme leaves
6 cups - Chicken or beef stock
1/2 pint - Heavy cream
Salt and white pepper, to taste
Croutons


Brown onion, in oil, to a light golden color in butter in a saucepan.
Add leeks, potatoes, ham bone, thyme and stock (or water) to onion.
Cover and simmer until potatoes are very soft.
Remove ham bone, discard.
Cool potato-leek mixture slightly.
Puree in a food processor or blender and return to pot.
Add cream and cook a few minutes longer.
Season with salt and pepper to taste.
Serve with croutons.
