Always use at least a day old rice. My ingredients varies with what I have in the fridge to use up but it always consists of dark soy sauce (for the colour) and light soy sauce (saltiness), five spice, ginger powder, shrimps/prawns, eggs (fried) and vegetables (cubed carrots, green beans and sweetcorn).

The meat varies from bacon to pancetta or sliced chicken breast or sliced pork. I love my food VERY spicy so I always cut up chillies (with seeds) and occasionally add in some chilli paste.

I like to pick up when I am in Chinatown in Toronto Canada, a bit of BBQ pork, Chinese sausage (they last forever), dried shrimp or Chinese cured pork belly (it is cured in soya sauce and smoked)

I find it is best to use cold rice, I have a small rice cooker and with the generic rice and the gorcery store so cheap, I cook the maximum my will do, leftovers make the best fried rice, fluffy and no soggy bits.

use some peanut oil instead of the regular kind
teriyaky or soy sauce
some fish sauce if it is a shrimp fried rice
some curry powder goes well too with it

Boiled PopcornShrimp and then put a little soy sauce to taste as it sits on your plate, AFTER you have cooked it.

SAFFRON It is abit expensive though but it is really good and somebody with a good pallet will appreciate it.
