I want to cook for my fiance tonight. I need something to make (I always cook shrimp) so nothing with shrimp.. or very little shrimp... preferably pasta of some kind.... SEND ME YOUR FAVORITE RECIPE!!! :)

Very, very easy, spectacular results:

Chicken breasts (2)
Chicken coating - bread crumbs or what have you
Thin slices of deli ham (2)
Sliced mushrooms
Slices of Swiss Cheese (2)

Coat chicken breasts with your favorite coating - even Shake and Bake will work. Bake for 20 minutes at 400 degrees. Meanwhile, fry sliced mushrooms. Remove chicken from oven, lay a thin slice of deli ham on chicken, cover with mushrooms, top with a slice of Swiss cheese. Return to oven for 1-2 more minutes or until cheese is melted. Serve over pasta or with potatoes or rice and lots of colorful vegies - bright green and orange - as the meal is quite white and brown without them, and a salad.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 chicken breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.

Spicy Chicken With Pasta

INGREDIENTS:
1 to 2 tablespoons extra virgin olive oil
2 teaspoons Asian chile paste, Sambal Oelek
1 pound boneless chicken breasts or tenders, cut in 1-inch cubes
12 ounces bow tie pasta
8 tablespoons basil pesto
1/2 cup chopped fresh cilantro
1/2 cup grated Parmesan cheese
PREPARATION:
Heat olive oil and chili paste in large skillet. Add chicken breast cubes and cook until golden brown. Cook pasta in boiling water tender. Drain well.
Place chicken mixture in bowl. Add the pesto, cilantro, and Parmesan cheese.


Add hot cooked pasta and toss lightly but thoroughly. Serve with additional Parmesan is desired.
Serves 4.
