I don't like a lot of junk in my meatloaf, either. I usually only add seasonings and and egg - no bread or crumbs even. I can't stand catsup on top of it! Anyway, here's a recipe from my card-collection - will try to make it as easy as possible...
"Down-Home Meat Loaf" - 8 servings
2 eggs; beaten
1/4 cup milk
2 cups soft bread crumbs
2 tbsp. prepared horseradish
1 1/2 tsp. salt
2 lbs. ground beef
1/4 cup catsup (didn't know if you want it)
Combine all ingredients (except catsup) in bowl; mix well. Press into greased 9x5x3" loaf pan; bake at 350* for 1 hour. Spread with catsup; bake 15-20 minutes longer. Let stand 10 minutes before slicing.

1 pound lean ground beef
1/2 cup salsa
1/2 cup bread crumbs
1/2 cup shredded Cheddar cheese (optional)
1 egg, lightly beaten
1 Tbls Italian Seasonings
3 cloves garlic, minced or 1 Tsp.dry
salt and pepper to taste, (I add 1 Tsp. of each)
Optional Top Crust 1/2 Cup ketchup mixed with 2 Tbls. brown sugar spread on top of loaf then baked
DIRECTIONS
Preheat oven to 350 degrees F.
In a large bowl, mix the ground beef, salsa, bread crumbs, cheese, egg, and garlic, italian seasonings, salt, and pepper. Mix well. Transfer to a 9 x 13 pan. pat into the shape of a loaf. Bake 45 minutes to 1 Hr. Edges start turning brown and lift up off pan

Easy Layered Italian Meatloaf:
Prep Time: 10 min
Total Time: 45 min
Makes: 6 servings, one piece each
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 jar (26 oz.) spaghetti sauce, divided
2 tsp. dried oregano leaves, divided
1-1/2 lb. extra lean ground beef
2 cups chopped zucchini
2 cups sliced mushrooms
3/4 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
PREHEAT oven to 375°F. Mix stuffing mix with half each of the spaghetti sauce and oregano. Add meat; mix well. Pat into 13x9-inch baking dish.
MIX zucchini, mushrooms, remaining spaghetti sauce and remaining oregano. Spoon evenly over meat mixture; cover with foil.
BAKE 25 min. Uncover. Sprinkle with cheese. Bake, uncovered, an additional 10 min. or until meatloaf is cooked through (160°F). Cut into six pieces to serve.

Buy a box of Lipton's Onion Soup and follow the recipe on the box. Very easy and good.
