They are for expansion if/ when the milk freezes.

Not to make it more pleasing to the eye. The milk companies don't care two hoots about aesthetics, but they are interested in strengthening the sides of the milk jugs. That counter-sunk dip helps relieve the pressure on the side and prevents it from bulging out. The straight sides make it much easier to handle during the filling process, during transportation and during the time it is in the stores. It also helps prevent damage to the sides which could result in leakage.

Those dips help make the milk jug more rigid. They re-enforce the jug so it doesn't flex as much. The same applies to the sheet metal in the floor and trunk of a car, which uses rolled channels to keep the metal from flexing and acting like a drum

Well DR it seems to me if you want to reuse the container, the dips prevent you from putting more than a gallon back in it.

Not sure which type of bottle you are refering to but if it has a handle then, then its not for better grip. It could be for recycling purposes- easier to make the bottle collapse.
