If i buy 1000mAh batteries over 750mAh what will happen if i put it in a LED flashlight: will it be brighter or last for longer?

and if it is brighter: how would it change the performance in my mp3 player which probably uses a constant amount of energy regardless of how many mAh there are..

Also if you know, what exactly is mAh?

mAh = milli ampere hour. 1/1000 ampere for 1 hour. Ampere is the measure for current in a device. Voltage is the measurement for power in a device. Example: A water hose with (Volts) 40 lbs. pressure will shoot a stream much farther than one with 20 lbs. pressure. A (Ampere) one inch water hose will supply much more the water than would a 1/2 inch water hose at the same (volts)pressure. A higher mAh battery of same voltage simply runs a device longer.

If the batteries are the same voltage, the power delivered does not depend on the mAh rating, but the battery will last longer. mAh represents the length of time a battery will last if it is providing a certain amount of current. For example, if your LED flashlight draws 100mA of current from your battery (this depends only on battery voltage), a 1000mAh battery will last 10hrs, and a 750 mAh battery will last 7.5 hrs. These values only approximate the battery life, since other factors come into play, including operating temperature, type of battery (NiCad, Lithium ion, alkaline, zinc air, etc). Depending on the type, the life also depends on the magnitude of current; some batteries last longer (have a higher mAh rating) at low current levels than at high.

As you said, the "energy" (current) used by the MP3 player does not depend on mAh, and that is true for all battery-operated devices. The performance is not affected.
