This is a recipe from the food network... Tyler Florence's whipped sweet potatoes and bananas with honey. I made this for Thanksgiving and for the first time ever, there was none left over!

5 medium sweet potatoes, scrubbed
4 bananas, unpeeled
1 cup (2 sticks) unsalted butter, at room temperature
1/4 cup honey
Kosher salt
1/2 cup all-purpose flour
3/4 cup dark brown sugar
1 1/2 cups pecans, chopped

Preheat the oven to 375 degrees F.
Prick the sweet potatoes all over with a fork, put them in a roasting pan and roast for 30 minutes. Toss the bananas into the pan and continue roasting for 10 to 15 minutes, until both the bananas and potatoes are very soft. Remove the pan from the oven but don't turn the oven off.

When the potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 1 stick of the butter, and the honey. Season with salt and beat vigorously with a wooden spoon until everything's well combined and the mixture is fluffy. Spoon into an oven-proof serving bowl and smooth the top.

In a separate mixing bowl, use your fingers to rub together the remaining stick of butter, the brown sugar, flour, and pecans until the mixture is the consistency of coarse crumbs. Sprinkle the crumb mixture over the sweet potatoes and return to the oven. Cook for about 20 minutes, until the crumbs are golden. Serve hot.

Sweet Potato and Cranberries Slice and steam one or two sweet potatoes. Peel and cut into chunks. Reserve water you steamed sweet potatoes in. Chop up 2 cups of cranberries. In a saucepan, bring the following to a slow, rolling boil: 2 cups cranberries 1 cup orange juice 1 cup reserved water 1/2 cup brown sugar (1/2 cup raisins optional) Take sweet potato chunks and place them in a casserole. Pour cranberry mix over them. Bake in the oven, with the turkey, for 45 minutes. Note: You can prepare it ahead of time (like the day before) and then just place it in the oven when your turkey is almost done. Happy Thanksgiving!

Spiced Sweet Potato Casserole:

You can assemble this casserole in its baking dish and store it, covered, in the refrigerator for up to a day.

3 pounds sweet potatoes
1/3 cup packed brown sugar
2 tablespoons butter
2 tablespoons orange juice concentrate
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
2 large eggs
1/4 cup chopped pecans

Preheat oven to 350°.

Pierce potatoes with a fork; arrange in a circle on paper towels in microwave oven. Microwave at HIGH 16 minutes or until tender, rearranging potatoes after 8 minutes. Let stand 5 minutes.

Cut each potato in half lengthwise; scoop out pulp into a large bowl. Discard skins. Add sugar and next 5 ingredients (sugar through nutmeg), and beat with a mixer at low speed until combined. Add eggs; beat until smooth.

Spoon mixture into a 1 1/2-quart baking dish; sprinkle with pecans. Bake at 350° for 45 minutes or until thoroughly heated.

Yield: 8 servings (serving size: 1/2 cup)

First, boil your potatoes . Drain and cool them . Spray the inside of a glass pan and put the potatoes in . Drop several tablespoons of butter on them all aroun the pan . Add several tablespoons of brown sugar . Drizzle vanilla generously on top . Shake cinnamon and a little nutmeg on them . Cover and bake at 350 for about 30-40 minutes . You can add mini-marshmallows and don't cover . The dish is done when it's hot or when the marshmallows are golden brown .
