I know from others that if I leave it overnight the inside of the thermal will break, and I would be ending up drinking the glass part. I need to know how long because I am on a special weight management program.

Why don't you leave the thermometer lying on top of the cup? The freezer temp and the liquid temp will be the same if you're drinking the liquid the following day.
