Welfare Cake "This cake is so moist that you would swear it was from a box!"
Original recipe yield: 1 - 9x13 inch pan.
INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons salt
1 tablespoon baking soda
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.

Please don't think me a stinker, but, my honest answer would be "don't bother".
Wait! Don't go!
The very best cake you can make at home is going to be able to (barely) come up to the standard of a good box mix. Why? Well, the food scientists at Betty Crocker and Duncan Hines have access to stuff and preparations of stuff (even common stuff like cake flour and superfine sugar), that are going to leave your best in the dust.
Pick a mix and doctor it with love and some walnuts or chocolate chips, and spend your time, effort and money on the frosting!
That's right. Invest in those big pecan halves, and royale some oranges, make a pastry cream, or splurge on some Ghirardelli chocolate and toast your own coconut. Make layers, add cherries, write things, add candy flowers, whatever!
After all, a cake is just a vehicle for frosting!

If you want a very good, simple and delicious cake try this.
Duncan Hines Butter Recipe Cake Mix
1 can (large) Mandarin Oranges
Icing
1 Container Cool Whip
1 Container Whipped Cream Cheese
1 Can Crushed Pineapple (Large)
1 Box Confectioners Sugar
Mix the cake as directed and fold in the drained oranges (I use milk instead of water if it calls for it-makes the cake even more moist)
Combine the whipped cream cream cheese and confectioners sugar and fold in crushed pineapple.
When cake is cooled ice and enjoy.
You can make a bundt cake or layer cake. Whatever your fancy.

I bake cakes regularly and decorate them, and find excellent simple cakes actually come in a box. Betty Crocker and Duncan Hines are usually good. The Golden Butter Cake, Fudge Chocolate, and French Vanilla are all good.
Aside from the "recipe", a few other pointers to a tender cake: make sure your oven temperature is accurate. When I'd set mine to 350, it actually baked at an even 400, making my cakes look like pyrmids and they were dry with a dark crust. I also like to wrap bake-even strips around the pans to make sure they are very moist and bake completely level.
Baking a box cake with these things in mind have actually generated countless complements. People don't believe it's a box cake, especially when they make it and it doesn't taste as good.

Basic Pound Cake recipe:
1/2 pound (2 sticks) butter
1 cup sugar
4 large eggs
1/4 teaspoon salt
Pinch ground mace or nutmeg
1 tablespoon vanilla extract
1/2 teaspoon lemon extract
2 cups cake flour
1 teaspoon baking powder
1/4 cup milk
1. Set a rack at the middle level of the oven and preheat to 325 degrees F. Use one, 8-1/2 x 4-1/2 x 2-3/4-inch loaf pan. Butter and line the bottom with a rectangle of parchment or wax paper.
2. Cream butter and sugar until soft and light. On medium speed, beat in 3 of the eggs, one at a time until well combined. Beat in salt, mace, vanilla and lemon extracts.
3. Combine the remaining egg with milk and beat together lightly. Stir baking powder into flour and sift once. With the mixer on low, beat a third of the flour into the butter mixture. Beat in half of the milk, then flour mixture again and continue until everything is incorporated -- five additions -- beginning and ending with the flour.
4. Fill pan 5/6 full. Bake for about 1 hour, or until it is well risen and colored, cracked in the surface and a thin knife inserted in the thickest part of the cake emerges clean. Cool pan for 10 minutes on a wire cake rack. Unmold, remove paper, and cool. Best eaten the next day.
Options:
VANILLA BEAN POUND CAKE: Omit mace. Split and scrape out the seeds of a vanilla bean. Add seeds to the egg mixture.
ORANGE POUND CAKE: Omit mace. Add the finely grated zest of a medium navel orange to the butter and egg mixture and substitute orange extract for the lemon extract.
LEMON POUND CAKE: Omit mace. Add the finely grated zest of a large lemon to the butter and egg mixture and increase the lemon extract to 2 teaspoons.
HONEY SPICE POUND CAKE: Decrease sugar in butter and egg mixture to 3/4 cup and 1/4 cup honey and the finely grated zest of 1 lemon to the butter and egg mixture. Omit lemon extract. Stir in 1 teaspoon of ground cinnamon, and 1/2 teaspoon each of ground cloves and ground nutmeg into the flour before it is added to the butter and egg mixture.

1lb all purpose flour
1lb caster sugar
1lb butter or soft margarine
8 eggs
Mix the lot all together until smooth (Use an electric mixer if you can)
Divide between two 10 inch shallow cake tins & bake at 180c for about 30 minutes, check after 20 with a skewer, if skewer comes out clean cake is cooked.
