I really prefer mashed potatoes with the skins on. just make sure you cut the potatoes before you mash them so you don't get HUGE skin blobs in them....that's kind of gross. Also, with the red ones, i like to press a clove of garlic into them.

Clean the potatoes well, then boil and mash with the skins on. Make sure to add some 1/2 and 1/2 or heavy cream, butter, salt and pepper! This is the best way to have mashed potatoes! Good luck!

No, it is not necessary to peel any potatoes before mashing them. Red ones are very pretty not peeled but mashed. Add a bit of garlic to get that fancy taste that most mashed red potatoes have when you eat out.
Be sure to scrub them well.

this is how i make my mashed potatoes with the red potatoes.
i first wash them and cut them all in half. (about 6 potatoes)
you can peel them if you want but if you want to have the skin the the mashed potatoes then don't peel just wash and cut in half.
i don't peel.
fill a pot up with water and boil them until there soft/you can also boil them in chicken stock (gives them good flavor)
drain them and then return them back into the pan add about 3/4 cups of milk and 2 tablespoons of butter and parsely flakes
mash them with a masher or a mixer (masher recommended)
put them in a serving dish put a scoop of butter on top and some dashes of the parsely flakes and your down
time frame about 30 mins

When it comes to mashed potatoes, it's personal choice as to whether you want the skin on or off. On one hand it adds nice colour and different texture, on the other you'll want to peel them for silky smooth mashed potatoes, or if you're serving them to people who may not like it. As already mentioned much of the potatoe's fibre and nutrients are there.

No. But reds are a "waxy" potato as opposed to the russet "bakers" which are classed as "starchy".
As such, even slight overmashing will give you a library-paste kind of mouth feel, although the taste will be just fine!
If you're using redskin or Yukon Gold 'taters, mash gently, leave some lumps and you might add some sour cream to keep them from binding. (I like garlic and chives, too, but you didn't ask about that.
Best wishes!

Nope. In fact the skin is where the vitamins and nutrients are found . Just cut the potatoes in chunks....boil until done... drain.. . add butter, spices, seasonings, and mash . We have been eating them this way for more than 40 years . And we did it again on Thanksgiving Day .

After trying loads of varieties of potatoes over the years Desiree are the absolute best. Have never left skins on but might be nice for a change.

You never have to peal potatoes, in fact the peals give your food a better flavor and color. Try using a mix of red and white potatoes, its a wonderful contrast. If you like fried potatoes, its good to use the same mix with a small onion and a few diced cloves of garlic added.
