Turkey Enchiladas with Sour Cream:
Notes: Use any favorite, good-quality salsa, red or green, for these enchiladas. The recipe is a great way to use up leftover holiday turkey, but if you don't have turkey on hand, shredded cooked chicken is a good substitute. Serve the enchiladas with a simple Mexican coleslaw of shredded cabbage dressed with lime juice and cumin.
3 cups shredded skinned cooked turkey (see notes)
2 cups sour cream
About 2 cups shredded sharp cheddar cheese (8 oz.)
1 teaspoon salt
1/3 cup vegetable oil
12 corn tortillas
1 jar (16 oz.) medium-hot salsa (see notes)
1. In a bowl, mix turkey, sour cream, 2 cups shredded cheese, and the salt.
2. Heat oil in an 8- to 10-inch frying pan over low heat. Dip the tortillas, one at a time, in the hot oil just until limp, about 5 seconds.
3. Fill tortillas equally with turkey mixture, roll up, and arrange side by side, seam down, in a 9- by 13-inch baking dish. Pour salsa evenly over the top.
4. Bake in a 350° oven until heated through, about 20 minutes. If desired, sprinkle more shredded cheese over hot enchiladas before serving.
Yield: Makes 6 servings

Bake until the skin is a light golden color, and then cover loosely with a foil tent. During the last 45 minutes of baking, remove the foil tent to brown the skin. Basting is not necessary, but will promote even browning.
The best test for doneness is the temperature of the meat, not the color of the skin. The turkey is done when the thigh meat reaches an internal temperature of 180 degrees F, and when the breast meat reaches an internal temperature of 170 degrees F. If your turkey has been stuffed, it is important to check the temperature of the dressing; it should be 165 degrees F (75 degrees C). When the turkey is done, remove from the oven and allow to stand for 30 minutes.

TURKEY TETRAZZINI:
2 cups cooked turkey, diced
1/4 cup margarine or butter
1/4 lb to 1/2 lb. fresh mushrooms, sliced
1/4 cup flour
2 cups chicken broth
2 Tablespoons dry Cooking Sherry
1 cup evaporated milk
salt and pepper to taste
8 ounces cooked spaghetti, drained
1/2 cup parmesan cheese, grated
Melt margarine, add mushrooms and cook 5 minutes. Stir in flour. Add chicken broth, sherry and milk. Stir and cook until mixture boils and thickens. Season to taste. Remove from heat. In 2-quart buttered casserole, put alternate layers of spaghetti, turkey, and mushroom sauce; finishing with spaghetti. Sprinkle top with grated Parmesan cheese. Bake at 400 degrees for 20 to 25-minutes or until bubbly.

Cut up some potatoes and cook in oil until 1/2 done. Add some onion, bellpepper, and garlic. Cook until potatoes are tender. Add chopped leftover whitemeat turkey and cook until heated through. Top with cheese and cover with lid or aluminium foil and remove from heat. Let set approx 3-5 minutes or until cheese is melted. Enjoy!

place all your leftovers in a casserole dish ,except leave out the mash potatoes.add the amount of cheese you want then spread the mash potatoes over the top like a crust and bake till all ingredients are hot all the way throughout the dish,and wallah! turkey with all the trimmings casserole!

Turkey Tetrazinni . Simply combine cream/milk, fresh ground pepper, garlic, parmesan cheese, salt, and asiago cheese. Heat and blend while stirring constantly . Add chunk/diced turkey and serve over a bed of pasta or on potatoes . Deliscious !!
Sorry. I forgot to tell you to add mushrooms, alot if you like .
