Start the eggs in cold water, bring the water to a boil, then remove the pan from the heat and let the eggs sit for 15 minutes. Our tests showed that 10 minutes of sitting time was enough; our tasters agreed that these were perfectly cooked eggs

The best way to cook hard boiled eggs is to take cold water, put the eggs in it, and bring it to a boil.

When it just comes to a boil, turn it off and let it cool.

Not only will the eggs be hard boiled when cooled, they'll be less likely to crack and - even more importantly - will have a nice yellow yolk, not with the greenish-grey you often see.

Simmer for 2 to 3 minutes for soft-boiled eggs or 10 to 15 minutes for hard-boiled eggs.

After 30+ years of cooking them the Julia Child method, I recently switched over to the Alton Brown (FoodNetwork) method which I prefer:
Boil 1 inch of water in a medium sauce pan with a lid.
When boiling, insert a collapsible steamer and put your raw eggs on the steamer.
Lower heat to medium low, cover pot. The eggs are perfect in exactly 13 minutes.
Place hot eggs into ice water to stop the cooking process.
Perfect every time, no green on the yolk, nice and creamy texture. Try it at least once.

Place eggs into a sauce pan. Sprinkle about a tablespoon of salt over them and cover them with cold water. Bring water to a boil and let them boil for 5 minutes. Let sit for about another 5 minutes in the hot water, drain water off eggs and run cold water over the eggs until pan is cool. Then add a tray of ice cubes over eggs, cover with cold water and let sit until ice has melted.
I tried several method and found this to be the best, especially makes it easy to peel the eggs. Works every time for me.

Put eggs in cold water to cover, bring to a boil, turn off heat, cover and let sit 20 minutes. Cool off by running cold water over them.

Eggs can be cooked about 15 min. if you keep heat on them and keep a gentle boil going. It is best to start them in cold water.
