Roll out pasta dough into a flat sheet. Drop teaspoons of finely ground seasoned meat or cheese about 2 inches apart on the dough sheet. This savory soup is a perfect way to put a new spin on standard pasta. Round out the meal with warm Italian bread and steamed mixed veggies.

1 (8-ounce) package frozen cheese tortellini
2 (14-ounce) cans reduced-sodium chicken broth
Small bunch watercress, large stems discarded, cut crosswise into thirds (about one cup), or 1/2 cup finely sliced fresh spinach leaves
2 scallions, trimmed, and finely chopped
4 tablespoons freshly grated Parmesan cheese

1. Cook tortellini according to package directions. Meanwhile, in a 3-quart saucepan, bring broth to a boil over high heat.

2. Add tortellini, watercress, and scallions to broth; simmer over medium-high heat for 2 minutes. Serve garnished with Parmesan cheese.

How kids can help: Older kids can chop the scallions; younger ones can sprinkle the Parmesan cheese over the soup.

An easy way is to go to the store and buy won ton wrappers; for cheese tortellini, mix 1 cup of ricotta, few tbsp. of grated Parm. cheese, 1 egg, salt, pepper, other spices if you like like Mrs Dash's Italian blend(garlic, rosemary,thyme,parsley,etc); keep won ton wrappers on a damp cloth (bottom and on top or they'll dry out); add a small tsp. of the mix, seal sides with either a mixed egg yolk or water and press all seams, twist to look like tortellini or leave ravioli shaped.

Go to the store, buy frozen, follow directions on package. Just as good as homemade, no one will tell the difference.
