ARANCINI SICILIANI (Crisp rice balls with savoury filling of cheese and ham)
225g Italian or short grain rice
50g grated Parmesan cheese
2 small eggs
300ml thick tomato sauce
salt and black pepper
50g Bel Paese cheese
50g cooked ham, chicken or salami
50g fine fresh breadcrumbs
Oil for deep frying
3 tablespoons single cream
Bring a large pan of salted water to the boil, add the rice and cook rapidly until just tender, after 15-20 minutes.
Rinse and drain thoroughly.
Put the rice in a bowl, stir in the Parmesan cheese, the lightly beaten eggs, 1 tablespoon of tomato sauce and a little salt.
Blend the ingredients thoroughly, the set aside until cold.
Dice the Bel Paese cheese and the meat finely and put them in a bowl.
Stir in 2 tablespoons of the tomato sauce and season to taste with salt and pepper.
Take 1 dessertspoon of the cold rice and mould it in a well-floured palm of a the hand, put a teaspoon of cheese and meat mixture into the hollow, top with a little more rice and shape it all into a ball about 4cm wide.
When all the balls have been shaped, coat them thickly with breadcrumbs.
Ina deep frier, heat the oil until hot, and fry the rice balls, two or three at a time, until golden brown.
Drain on crumpled absorbent paper and keep the rice balls hot.
The remaining tomato sauce can be thinned with a little single cream and served separately.

Quick and easy Chicken and Rice
1 whole cut-up chicken
1 small yellow onion
1/2 cup chopped celery
8 ounces fresh cut-up mushrooms (optional)
1 can cream of mushroom soup
1 can cream of celery soup
1 cup of either white or brown rice
In small skillet saute onion and celery until soft.
In a bowl mix soups and water until you have 2 cups of liquid.
Heat oven to 350 degrees
In a 9x12 pan mix soup, rice, onion, garlic and mushrooms.
lay the chicken pieces on top.
Cover the pan with foil. Bake for 1 hour or until chicken reads 180degrees on a meat thermometer.
Through trial and error I have found that the best rice for this is a quick cook rice like Minute Rice or Uncle Ben's.
You may season this as you like best. To make it different try different spices from hot to not. Tastes great and easy to change so it is a great chicken recipe or a great rice recipe.

"Campbell's One-Dish Chicken & Rice Bake" - Serves 4
1 (10 3/4 oz.) can Campbell's Cream of Mushroom Soup
1 cup water
3/4 cup uncooked regular white rice
1/4 tsp. paprika
1/4 tsp. pepper
4 boneless, skinless chicken breast halves
In 2-quart shallow baking dish mix soup, water, rice, paprika and pepper. Place chicken on rice mixture; sprinkle with additional paprika and pepper. Cover; bake at 375* - 45 minutes or until chicken and rice are done.
"Chinese Fried Rice" - 16 servings
1 cup finely diced cooked ham, chicken or pork
1/4 cup salad oil
1 (6 oz.) can sliced mushrooms; drained
7 cups chilled day-old cooked rice
2 green onions (scallions); finely chopped
1/4 cup soy sauce
2 well-beaten eggs
In 12" skillet, brown meat in hot oil; add mushrooms, rice, onion and soy sauce. Continue to fry over low heat about 15 minutes, stirring constantly.
Add well-beaten eggs; continue to stir for another 15 minutes or until dry enough to be fluffy. Add additional soy sauce, if desired.
"Creamy Raisin Rice Pudding" - 6 servings
3 1/2 cups milk
1 cup uncooked white rice
1 (14 oz.) can sweetened condensed milk
1/3 cup raisins
1/4 tsp. vanilla extract
Whipped cream
Ground cinnamon
Combine milk and rice; bring to a boil over medium-high heat. Reduce heat to medium-low; cover. Cook, stirring occasionally, until mixture is creamy and liquid is almost absorbed, 25 minutes. Stir in condensed milk, raisins and vanilla. Cook, stirring occasionally, until thickened, about 10 minutes. Remove from heat. Let stand, covered, 10 minutes. If desired, garnish with whipped topping and cinnamon.

1/3 cup lemon juice

Instructions
Preheat oven to temperature 375°F. Combine first 4 ingredients in a bowl and set aside. Combine cooked rice, cheese and broccoli in a separate bowl. Add 1/4 cup lemon butter to rice mixture. Use some of the lemon butter to coat a shallow oven-proof baking dish and set the remainder aside. Lay fillets flat on a sheet of wax paper. Divide the rice stuffing equally and place portion on the wide end of each fillet. Gently roll up, secure with toothpicks, and place seam side down in prepared baking dish. Pour remaining butter sauce over rolled stuffed fish. Bake 20 minutes or until fish flakes easily when tested with a fork. Remove toothpicks before serving.

Instructions
Combine stock, water, and half the salt in a saucepan and bring to a boil over high heat. Stir in rice and return to a boil. Immediately reduce heat to low. Cover saucepan and simmer 20-25 minutes, or until rice is tender and liquid is absorbed. Remove from heat and set aside. While rice is cooking, melt butter in a heavy nonstick skillet over medium heat. Sauté onion 5-7 minutes, stirring frequently, or until softened. Add mushrooms and sauté 4 minutes. Stir in tomatoes, bell pepper, celery, and broccoli. Simmer 10 minutes or until vegetables begin to soften
Season with cayenne and remaining salt. Stir rice into vegetables and cook until heated throughout

How about using it as a side for a delicious stir-fry? I have also seen rice topped with chili.
Or make a batch of fried rice;
1 cup diced cooked chicken
1 tbsp soy sauce
1 cup uncooked long grain rice
1/3 cup salad oil
2 1/2 cups chicken broth
1/2 cup onion coarsely chopped
1/4 cup finely chopped green pepper
1/4 cup thinly sliced celery
2 eggs, slightly beaten
1 cup finely shredded lettuce or Chinese cabbage
Combine chicken, soy sauce and 1/2 teaspoon salt; let stand 15 minutes. Cook rice in hot oil in skillet over medium heat till golden; stir frequently. Reduce heat; add chicken with soy sauce and broth. Simmer covered for 20 to 25 minutes or till rice is tender. Remove cover last few minutes. Stir in onion, green pepper and celery. Cook uncovered over medium heat till liquid is absorbed. Push rice mixture to sides of skillet. Add eggs; cook till almost set; blend into rice. Stir in lettuce.
Serve at once with soy sauce. Serves 6.

I like to buy Thai leaves and spiced peanuts with spicy peppers, add about 1/2 cup of nuts, leaves,2 whole peppers to the rice while cooking; stir once 1/2 through and serve alone (it is so good with some butter added) or with some sort of chicken, fish or pork! By the way, you can buy the package of peanuts/peppers/Thai basil at Trader Joe's!

Andouille and Red Beans with Rice:
Prepare and bake a corn bread mix while the red beans and rice are cooking.
1 (3 1/2-ounce) bag boil-in-bag long-grain rice
Cooking spray
4 ounces andouille sausage, diced
1 cup chopped red bell pepper
1 cup prechopped onion
1 1/2 to 2 teaspoons salt-free Cajun seasoning
1 teaspoon dried thyme leaves
1/2 teaspoon hot pepper sauce (such as Tabasco)
1 (16-ounce) can dark kidney beans, rinsed and drained
1 (14-ounce) can fat-free, less-sodium chicken broth
1/4 cup chopped fresh parsley
1/2 teaspoon salt
Cook rice according to the package directions, omitting salt and fat.
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add sausage; cook 3 minutes or until lightly browned. Using a slotted spoon, transfer sausage to a bowl, and keep warm.
Add bell pepper, onion, Cajun seasoning, thyme, and hot pepper sauce to pan; sauté 3 minutes or until onions are tender. Baked Brown Rice & Tuna Casserole
3 cups basmati rice, cooked, hot (brown or white)
2 cups celery, sliced
1 tablespoon butter or margarine
2 (6 ounce) cans tuna, drained
3 hardboiled egg, chopped
3 tablespoons lemon juice
1 cup mayonnaise
1 (3 ounce) can French fried onion rings
Saute celery in butter until tender crisp.
Add brown rice, tuna, eggs and lemon juice. Fold in mayonnaise. Season to taste.
Turn into shallow buttered 1 1/2 quart casserole. Top with onion rings.
Bake at 350 for 20 minutes.

Saute garlic until brown with star margarine or any butter oil
then fry rice until golden brown.
Rich in vitamin B and tasty too.
